Ways to hop beer

The number of ways in which you can hop beer at home is almost endless, but in practice, the traditional way of hopping during the brewing process is considered the most understandable and popular. Bitter hops containing a large amount of alpha acids are added at the beginning of the boil, at least 45 minutes before the end of the boil (more often 60 minutes, for especially bitter hop varieties, boil up to 90 minutes). This is due to the need for isomerization of alpha acids for their complete dissolution. At the same time, long boiling destroys essential oils, so aromatic hops are added at the end of the boil, usually in the range of 5-30 minutes before the end of the boil. The closer to 30 minutes the hops are added, the more bitterness and less flavor you will get. Conversely, the closer to 5 minutes the hops are added, the more hoppy aroma the beer will get. For many styles of beer where hop aroma is key, hops are added in the range of 0-5 minutes.

However, traditional hopping is not the only way to enrich the drink with hop flavor and aroma. Here are some of the most popular ways:

  • – hops are added immediately after mashing the malt, before brewing. Since there is no high temperature factor, the beer is enriched with flavoring substances of essential oils in their original form, but not with alpha acid isomers, due to which the beer acquires the taste and aroma of fresh hops, without additional bitterness. Most often, dry hopping is carried out at the stage of secondary fermentation, since a large amount of carbon dioxide during the primary fermentation “captures” with it the volatile components of essential oils. It is also important to choose the right time for infusion, because with prolonged contact with beer, alpha acids begin to oxidize and give the drink bitterness.

In the modern practice of craft and commercial brewing, it is not uncommon to combine different hopping methods in order to obtain a drink with a more expressive taste and aroma of hops. Buying and storing hops

When buying hops, you should immediately think about how much it is needed and how to store it. The most common form of hops, in pellets, has become such for a reason.
