How useful is cauliflower for a person?

Cauliflower (Brassica oleracea L. var. botrytis L.) is a common vegetable crop, one of the cultivars of the garden cabbage species. Belongs to the varietal group botrytis.wiki

A bit of history

This extraordinary cabbage appeared long before our era. It is believed that it originated from wild cabbage, and it happened in Asia.

From there, it came to Turkish and Italian cuisine, and in the 16th century it was brought to France, from where it spread further throughout Europe.

It belongs to the cruciferous family along with white cabbage, broccoli and kohlrabi.

The color got its name because of its similarity with unblown buds, collected on one leg.

The green leaves bordering the head do not allow sunlight to pass through and do not allow production, so cauliflower is usually white and cream in color, although light green and purple varieties are found.

Funny cauliflower crafts

Because of the original appearance, it can be used to make delicious and outwardly attractive dishes for children. They can be designed in the form of clouds, lambs, poodles.

Contraindications to the use of cauliflower

Cauliflower contains natural substances called purines.

Purines are an essential constituent of any cell and are found in all plants, animals and humans.

But some people have a rare genetic disorder called gout, in which a diet high in purines can cause a host of problems.

Also, you should not use this vegetable in the presence of intolerance to some other substances contained in it.

Care must be taken when eating cauliflower during pregnancy. You need to start with a small portion and see if an allergic reaction has followed.

If there is no allergy, then you can eat, because for pregnant women, the vitamins and minerals contained in this vegetable are extremely important.

How to choose and store cauliflower?

When buying, choose a clean cream-colored vegetable with a dense structure that looks like cottage cheese.

If there are gray or black spots on the head of cabbage, it is better not to take it, or then you need to cut out the darkened places.

The more green leaves around the head, the fresher the vegetable will be.

You can store raw cauliflower in the refrigerator in a paper bag.

It is desirable that the barrel be at the bottom during storage.

If you buy already cut colored inflorescences, then you need to eat them within a couple of days, because in this form they have no protection, and they deteriorate faster than a whole head.

Now you know a little more about the benefits of cauliflower.

I am sure you will be happy to use it in cooking various dishes for yourself and your family.

Many include cauliflower in their diet, considering this vegetable as a source of a number of essential substances for the body. And someone just likes dishes prepared from it. Meanwhile, cauliflower can bring both benefit and harm to the human body.

Cauliflower is one of the garden plants, a member of the cabbage family (formerly cruciferous). In the open field, it grows and bears fruit in regions with a warm and temperate climate, has many varieties and hybrids. It is possible to grow under a film and in heated winter greenhouses. The inflorescences of this plant are used for food, which can be not only white, but also cream, greenish and other colors.

Like other vegetables, cauliflower is considered a low calorie food. Therefore, it can be used without fear by people who care about their health, are attentive to what they eat, or for some reason are forced to follow a diet. There are only 29-30 calories in 100 g of raw and boiled vegetables. After heat treatment, the situation changes somewhat. The energy value of 100 g of fried cabbage increases to 120 calories.

But of greater interest are data on the chemical composition of cauliflower. It is quite diverse and, one might say, unique. The inflorescences of the plant contain:

  • proteins, fats and carbohydrates;
  • vitamins, macro- and microelements;
  • organic acids;
  • pectin and fiber;
  • phytohormones and phytoncides.

There are 2.5 g of proteins per 100 g of the product, 0.3 g of fats and 5.4 g of carbohydrates. Vitamins in cauliflower are represented by group B, as well as E, C, PP, H. Of these:

  • α - tocopherols - 0.08 mg;
  • γ-tocopherols - 0.2 mg;
  • thiamine - 0.05 mg;
  • niacin 0.507 mg;
  • pantothenic acid - 0.667 mg;
  • ascorbic acid - 70 mg;
  • nicotinic acid - 0.507 mg.

There is also a very valuable vitamin-like compound methylmethionine (vitamin U) in cauliflower, which has an antiulcer effect and resists the manifestations of allergic reactions by converting it into an inactive form of histamine, as well as coenzyme Q 10, which is responsible for energy metabolism in cells and is known as an antioxidant. Vitamins are preserved in cauliflower even after its cooking.

In addition, the inflorescences are rich in macro- and microelements. They have a lot of potassium, sodium, phosphorus, magnesium and calcium, high iron content, zinc, cobalt. The vegetable contains malic, folic, citric and tartronic acids valuable for our body.

Useful properties for the body

As a food product, inflorescences are used, from which various dishes are then prepared. Cauliflower is boiled, stewed and fried, frozen in the refrigerator, salted and pickled. For healthy people, regardless of age and gender, there are no special restrictions on the use of vegetables. It can be served at the table whenever you want.

Eating raw cauliflower is also not forbidden; for example, it goes well in salads. However, you shouldn't get carried away. Everything should be in moderation. The light green outer leaves of cauliflower are also edible - they can also be used as food.

For medical purposes, the vegetable is introduced into the menu for various diets, and is also used for external use. Freshly prepared cauliflower juice also has useful properties. The dietary properties of cabbage are also useful for pancreatitis. Steamed or baked inflorescences will be light and well-digestible food that does not irritate the diseased organ and stomach. If you want to support the liver or kidneys, cabbage must also be present on the table regularly.

General information

Cauliflower grown by people for more than two and a half thousand years, its homeland is the Mediterranean. To date, there is no wild-growing analogue of this plant, therefore it is believed that it was bred artificially. This is a very widespread plant belonging to the cruciferous family. The plant is an annual, depending on the variety, it can be from 15 to 70 centimeters in height. Large leaves emerge from the stem to the sides with a rosette, between which a head appears at the end of the stem - white fleshy dense shoots with future flower buds. If the heads are not collected in time, tassels of yellow flowers appear, and then seeds in pods.

Why colored?

The answer is very simple: the inflorescence of a plant is very similar to a flower. But recently, English scientists have bred several varieties of really colorful ones! In orange heads, the amount of beta-carotene is increased, in green ones, chlorophyll, and in lilac heads, the useful substance anthocyanin, which prevents heart and vascular diseases. The taste of multi-colored vegetables has not changed in any way, but the price has increased significantly. But perhaps the change in color will help boost cabbage sales, which have fallen by almost a third in Europe in recent years.

Beneficial features

Cauliflower has not received proper distribution in our country, but in vain. After all, this is a very useful product for people of any age, willingly included in diets. More Ibn Sina recommended to use this vegetable in the cold season to strengthen the body.

Inflorescences contain less coarse plant fibers than white cabbage, so cauliflower can be eaten even by people suffering from diseases of the intestines and stomach. For example, with a stomach ulcer and duodenal ulcer, it is strictly forbidden to use white cabbage, and cauliflower - please, to your health.

It practically does not irritate the mucous membrane of the gastrointestinal tract. With low stomach acidity, nutritionists recommend eating boiled cauliflower. With ailments of the gallbladder and liver, cauliflower helps the movement of bile and regulates intestinal motility.

Frequent consumption of this vegetable in food reduces the likelihood of developing malignant tumors of the breast in the fairer sex and the prostate in men. This property is explained by the presence of enzymes - complex compounds necessary for the human body.
The juice of this plant is useful for diseases of the kidneys, liver, diabetes, gastritis, inflammation of the bronchi.

Calorie content and composition

Cauliflower is a champion in the content of useful biologically active substances. It has a lot of proteins - twice as much as in white cabbage. Moreover, proteins contain essential amino acids. lysine And arginine. The nitrogen components of this plant are protein compounds that are easily digested by the body, so this type of cabbage is more acceptable for absorption.

These statements have been verified experimentally. Already 16 hours after receiving a portion of cabbage in the body, the number of active immune cells increases. These cells become more active and devour 50% more harmful microbes. Thus, cabbage can be considered an immunomodulator.

For weight loss

This diet can be called extreme, because the body receives a minimum amount of calories. At the same time, cabbage gives satiety and enriches the body with useful substances.

The duration of the diet is 3 days. For a day, you can eat 1.5 kg of boiled cabbage. This number is divided into 4 doses. If you follow a diet, then in three days you can part with three kilograms. It is necessary to observe the drinking regime. After the end of the diet, you should reduce the calorie content of the usual diet to 1500 kcal, give up fried, fatty, spicy and salty. Then the weight will not be gained again for a long time and gradually, slowly it will decrease more.

It is not allowed to stick to this diet for more than 3 days, as it does not have enough protein, and the cells of the body will starve.

For nursing mothers

The attitude towards the use of cauliflower by a nursing mother is different among specialists. Some believe that this vegetable, especially in boiled and steam form, can be included in the diet without fear. Others believe that cabbage can adversely affect the taste of breast milk.
One thing is clear: the introduction of this product into the diet of the mother of this product will not badly affect the health of the baby. But cabbage should be used very carefully, little by little and monitor how the baby eats. If nothing bothers him and his appetite is normal, then the cabbage has only benefited.

How to choose?

Small inflorescences should fit snugly against each other, it is better to take a head of cabbage, on which the leaves are still preserved. The color allowed is white, greenish, greyish, violet and slightly yellowish. The color of the head only indicates the presence of certain substances in it ( for example, yellowish varieties may have more carotene).

Particular attention should be paid to the presence of black spots on heads of cabbage. It is better to put such heads of cabbage aside. If, nevertheless, a spotted head is purchased, all dark places must be removed before cooking.

The shelf life of fresh cabbage is only one and a half weeks at a temperature of 0 degrees.
For longer storage, cabbage can be frozen.

Cooking

Properly cooking cauliflower means preserving all its beneficial properties. To do this, cook it as little as possible and pour a little water too. The best cooking method is the steamer. If the cabbage was boiled in water, the broth can be successfully used for soup.

As soon as the cabbage is cooked, it must be removed from the liquid immediately, this will help preserve the taste. And in order for it to remain white and beautiful, immediately after pulling it out, dip it into cold, slightly acidified water.

Soaking raw cabbage in milk before cooking will make the dish even more delicious. And there is another way to cook cabbage - in mineral water, it turns out also very tasty.

You can cook from cauliflower first and second courses, sauces, eat it fresh. It goes well with almost any vegetables and meat, sour cream and cheese.
Not very common, but a wonderful way to preserve cabbage is sauerkraut.

Puree for kids and more

This vegetable is great for the menu of babies up to a year old, as well as for the first feeding. You can especially recommend it to those who often have constipation. The high nutrient content and soft texture make cauliflower an ideal food for children.

Puree for babies:
Take a few cabbages, put in a small amount of water ( without salt), weld. Pull out the cabbage and chop with a blender, pouring in such an amount of broth to make a liquid puree. Cabbage broth is of great nutritional value, because during the cooking process, some of the nutrients from the vegetable passed into it. At first, you can make the puree quite liquid and start feeding with half a teaspoon. The next day, you can give a whole teaspoon and gradually increase to 50 grams per day. At first, the baby may not be enthusiastic about food, since after breast milk, puree may seem bland to him. But gradually he will get used to it and will eat with pleasure.

Two-year-olds can be offered delicious cabbage with cheese sauce:
Boil the cabbage in salted water and immediately transfer to the pan. Prepare a separate sauce from a tablespoon of butter, 50 ml of milk, 1 tablespoon of flour and 100 ml of cabbage broth. Pour sauce over cabbage and sprinkle with grated cheese ( 30 gr.), put in the oven to form an appetizing crust.

Dishes

Raw
Cauliflower was brought to Russia in the eighteenth century, but still could not take root: it was too cold for her, and she grew poorly. Therefore, the culture of eating this healthy vegetable has not yet been fully assimilated.
For example, many do not know that you can eat it raw! Cabbage goes well with any salad vegetables. It can be eaten with garlic sour cream or simply dipped in your favorite sauce and chewed. Children, by the way, with great pleasure gnaw on cabbage stalks, which are usually cut off and thrown away before heat treatment.

This salad cannot be classified as dietary, so it is undesirable to use it for obese people. Since mushrooms are a fairly heavy food, salad should also be discarded by those suffering from pancreatitis.

Breaded
Dry the cabbage, divide into medium-sized kops. Boil in salted water for 10 minutes. You may or may not cook at all.

For batter: beat 2 yolks and 2 whites. Mix the yolks with 34 cups of flour, a little salt and then add the whites.

Put the cabbage in a refractory form, top with cottage cheese and a little grated cheese. Put in the oven at 180 degrees for half an hour. Consume hot.

cauliflower leaves
Do not throw away the leaves of this plant, as they have a lot of useful substances and they can also be eaten. To do this, the leaves are cut, divided into large pieces and boiled in salt water until tender. They are used as a side dish for meat dishes, poured with melted butter.

Seed preparation and cultivation

Approximately 100 days pass from the moment the seeds are planted to the time the cabbage is harvested. A feature of this agriculture is its exactingness to temperature. In order for the head to form, the air temperature must be at least 18 degrees. If it is warmer than 22 degrees, the cabbage needs frequent watering, otherwise the heads will be very small. Cabbage also loves well-lit areas.

Seedlings are planted in the ground. To grow good seedlings, you need to properly prepare the seeds. They should be put in a canvas bag and lowered for 20 minutes in water of 40 - 45 degrees. Then put in the refrigerator for 10 minutes. Then, at night, they are poured with ready-made fertilizers, decanted and, after slightly drying, they sow. Seeds should be sown in the second half of March. For 50 - 53 days, it should reach the desired condition. The substrate is prepared on the basis of peat with the addition of ash and humus.

The temperature in the room where the seeds are germinated should not be below 18 degrees.
Due to the fact that cabbage has weak roots that are shallow, it should be fed frequently and the soil for it should be sufficiently fertile. In addition, it is necessary to provide plants with water. Watering should be done at least once a week.

Allergy to cauliflower

Despite the fact that cabbage is not considered an allergen, and it is even recommended as a first food, in some babies it causes a rash on the cheeks. It is interesting that most often mothers complain about the rash, giving their children canned ready-made puree. And there is almost never a mention of an allergy to homemade mashed cauliflower. Therefore, it is better to work hard and make mashed potatoes for the child from cabbage bought at the bazaar.
Children who are allergic to this product can try giving broccoli. Usually this type of cabbage does not provoke any unpleasant phenomena at all.

Brought from the Mediterranean, cauliflower is now firmly rooted on the tables of Russian residents. And for good reason: it is not only rich in vitamins and minerals, but also allows you to diversify the menu with a fairly large number of recipes.

Housewives all over the world have adopted this vegetable as side dishes, snacks, and an ingredient for main dishes. Quite simple to prepare, it will allow a cook of any skill level to cope with it.

"Cabbage with a higher education"

Mark Twain was right when he called this one that way. The vegetable is so rich in useful substances that it becomes simply an "excellent student" in comparison with other varieties of the culture.

It got its name not due to bright colors, but because of the structure of the head used for food. It consists of individual inflorescences that resemble flowers in appearance. Hence the name.

In Russia, it began to be used as food during the time of Catherine II. Now the main suppliers of this vegetable are the USA, France, Asian countries.

Nutritional value of cauliflower

Such cabbage is the richest source of many useful minerals and trace elements. The amount of vitamin C in it is able to compete with its content in lemons, and the presence of vegetable protein only confirms the uniqueness of this product.

In addition, cauliflower contains vitamins B, A, PP, K, H, starch, organic acids, natural sugar.

The fiber in its composition promotes bowel function and improves metabolism, which has a beneficial effect on the figure. In combination with protein, which is involved in the growth of muscle mass, cauliflower is indispensable for people who are struggling with excess weight. With all this, the calorie content of the product is very low.

Cauliflower is a source of Omega-3, polyunsaturated acids that help remove "bad" cholesterol and support the functioning of the cardiovascular system.

Studies show that most foods lose their beneficial properties during heat treatment. The same thing happens with cauliflower. When cooked, it loses many vitamins. So can you eat raw cauliflower? The advice of doctors allows us to conclude that it is possible. This variety, among other things, is even more easily digested than white cabbage, which is used to eat raw.

Of course, like any food product, not everyone can use it. People who are prone to certain diseases should first consult a doctor before preparing cauliflower dishes!

Who Should Eat Cauliflower?

For those who suffer from liver diseases, cauliflower is also recommended, as it stimulates the outflow of bile and regular bowel movements. There is no longer any doubt about whether it is possible to eat raw cauliflower.

This vegetable is used for gastritis, bronchitis, to remove toxins and even to prevent cancer.

Many mothers who ask a pediatrician about whether children can eat raw cauliflower also receive an affirmative answer. Moreover, it is often used as complementary food for the little ones. In addition to being very useful, it also helps the stomach and intestines work more gently, without provoking bloating, as happens when using white cabbage.

Can a pregnant woman eat raw cauliflower? Not only possible, but necessary. Is it worth re-listing the set of useful substances that a future mother and her baby can get with this product? People with any food allergies should also check with their doctor to see if they can eat raw cauliflower.

With special attention should be paid to the use of vegetables for people suffering from hypothyroidism.

How to choose fresh cauliflower?

The cauliflower should be a soft cream color, without various spots and dullness. Leaves - not sluggish, green.

You can buy it both in the supermarket and in the markets. Only in the second case it is worth being more attentive to the integrity of the head. If it is damaged, it is better not to take it, since its shelf life is significantly reduced. At home, the whole head is stored for up to a week. It is better to store it in the refrigerator in a paper bag.
