  1. Dry the peanuts in a dry skillet or baking sheet for 5-7 minutes. The fire must be low, otherwise the filling for the dessert may burn.
  2. Transfer the cooled nuts to a bag and crush them with a rolling pin.
  3. Pour sugar, cocoa and milk powder into a saucepan or stewpan. Pour in water and stir the ingredients.
  4. Place the dishes with the "dough" on the stove over medium heat. Bring the mixture to a boil, then reduce heat to low and cook the sherbet base for another 8 minutes. The sweet mass must be constantly stirred, otherwise it will stick to the walls of the dishes.
  5. Remove the pot from the stove and let the contents rest for 5-7 minutes. After that add butter and peanuts, stir the ingredients again.
  6. Transfer the resulting mass to a plastic container, level the surface of the future dessert. When the mixture has cooled, put it in the refrigerator for 7-8 hours. After that, the treat can be cut into several pieces and served.

Formally, the sweetness known to us as "sherbet" belongs to the group of oriental desserts. But is everything so clear and simple with the recipe? It should be said that sherbet in the East can be different - a liquid soft drink based on juices with the addition of honey or sugar and a delicate confectionary product resembling soft candy. We'll talk about the second option. This delicacy is a delicate creamy fudge with the addition of nuts, dried fruits and other goodies. Traditionally, it is prepared in the form of a rectangular slab, for serving, it is cut into portioned pieces. The most popular variety is peanut sorbet. This recipe will be easy to repeat at home, although it differs slightly from the method of preparation common in eastern countries.

By the way, a more accurate transcription of the Arabic name for the dessert is “sherbet”. However, due to the peculiarities of Russian speech, the word with the letter "u" is used for a long time. This sweetness has nothing to do with frozen fruit juice - sorbet.

What ingredients are required:

Step-by-step recipe for making homemade sherbet with roasted peanuts:

It is better to prepare the base of the dessert from a high-fat dairy product. Cream or whole milk will work, but not skim milk. Depending on the original fat content of the base, it is necessary to increase or decrease the amount of oil added to the sorbet. The higher the fat content of the dessert, the faster it will solidify. Pour the cream into a deep saucepan (saucepan) with a thick bottom. Set aside about 150 g of sugar. Add the rest to the cream.

Stir. Put it on a small fire. Stir constantly. When the mixture boils, reduce the heat level. Cook with a slow, continuous boil.

While the creamy mass is boiling down, prepare the caramel. It will give the sorbet a caramel flavor and rich color. I cooked caramel dry, no liquid added. Transfer the sugar to a thick-bottomed skillet (or other wide dish). Put on moderate heat. After a few minutes, the granulated sugar will begin to melt and change color. When caramel forms in the center of the frying pan and there is some sugar that has not melted around the edge, remove the frying pan from the stove and shake. Stirring with a spoon or spatula is not recommended. You should get a rich amber color. If the caramel burns, the sherbet will take on a bitter taste. Therefore, control the shade by periodically removing the pan. It is undesirable for the caramel to boil too much - it will turn out to be heterogeneous.

At the end of cooking, add lemon juice or a little acid. Stir quickly. Remove from heat immediately. The added acid will keep the liquid consistency.

Pour the caramel mass over the cream. Due to the temperature difference (the melted sugar is hotter), the caramel will fizzle and partially crystallize. Try to pour it out carefully, do not burn yourself. Stir until smooth. Boil for 20-25 minutes until thick. Remove from oven. Add a piece of butter. Stir.

Fry peanuts in a dry frying pan (oven, microwave). Cool slightly. Peel off.

Along with or instead of peanuts, you can add walnuts, pine nuts, cashews, almonds. Also, delicious sorbet is obtained with dried fruits (pre-soften them with boiling water and, if necessary, chop them), marmalade, candied fruits.

Mix with caramel cream base. Take a shape of a suitable volume. Line the bottom with oiled baking paper. Pour the sorbet. Flatten the top. Leave to harden for a few hours at room temperature.

On a note:

You can cover the top of the sherbet with a chocolate glaze. Take 100 g sour cream, 3 tbsp each. l. cocoa powder and sugar. Mix in a saucepan. Cook, stirring occasionally, on the stove until the sugar dissolves. Add 50 g unsalted butter. Stir until melted. The glaze will turn out to be uniform, shiny. Apply it to the slightly cured sorbet. Wait for the dessert to solidify completely.

Cut the finished sweetness or break it into portions. Serve with tea. Very tasty!
