  1. We cut each of the selected zucchini lengthwise into two approximately equal parts. If the fruit is very small, you can remove only the top part - the lid.
  2. We take out the pulp, leaving the walls 1 cm thick, while trying not to damage the fruit itself.
  3. Place the prepared zucchini in a frying pan with heated oil, fry on different sides until browned.
  4. Add water, reduce the heat as much as possible, under the lid for 15 minutes, bring the zucchini halves to an almost soft state.
  5. Place the zucchini halves on a heatproof baking dish.
  6. Now let's prepare the filling. We cut the fillet, washed and wiped with a paper napkin, into small cubes; we do the same with the squash pulp, pepper, and onion.

  8. Pass the garlic through a press.
  9. Finely chop the washed greens.
  10. Place the fillet cubes in a hot frying pan, stirring and frying until browned. In this case, the released liquid should completely evaporate, but the meat itself should not be brought to an overdried state.
  11. When the meat juice has evaporated, add oil, salt and spices, stir and remove from heat and transfer to a clean plate.
  12. Put the oil back into the pan, fry the onion in it until soft, then add the pepper pieces, stirring all the time, fry for about 5 minutes. Next we repeat the same steps with the squash pulp.
  13. Combine the fillet with vegetables and mix.
  14. Add tomatoes, garlic, as well as chopped herbs, spices, salt, and a couple of grams of sugar.
  15. Prepare the sauce. To do this, mix the cream with ketchup, add and mix.

It often happens that children do not want to eat zucchini dishes. We offer a very interesting recipe for an improvised pie. The dough for it is prepared with the addition of zucchini, and meatballs are also used. We assure you that even the most picky child will like it, and adults will surely appreciate it too. A delicious crispy cheese crust forms on top of the pie, and inside there is a delicate filling consisting of zucchini and minced meat. For preparation you should take the following products:

  • one medium zucchini;
  • egg;
  • salt;
  • wheat flour - 180 g;
  • minced meat - 150 g;
  • baking powder - 1 tsp;
  • onion head;
  • Italian herbs (spices);
  • hard cheese - 4 tbsp. l.;
  • breadcrumbs.

Grate the zucchini, do not drain the liquid, add salt, egg and baking powder. Gradually add flour, knead the dough and add two tablespoons of cheese. The structure of the mass should be similar to the consistency of pancake batter. We pass the meat through a meat grinder along with onions, season with salt and herbs, knead and beat well. We form meatballs the size of a walnut from the minced meat.

  • onion - 2 heads;

  • raw rice - 80 g;

For the base take:

  • two young zucchini;
  • three medium-sized tomatoes.

For the sauce:

  • flour - 2 tbsp. l.;

1. Wash the zucchini and remove the tail from the stalk. If you have a young vegetable, then you do not need to peel the skin. Grate it on a coarse grater, pour it into a bowl, sprinkle with salt and let stand for 15 minutes to release excess liquid.


2. Cut the onion into cubes and fry in a frying pan greased with vegetable oil for two minutes until transparent.

3. Add the minced meat to the onion, fry for another five minutes, stirring all the time until the mixture becomes homogeneous. Salt and sprinkle with seasonings. Bring to half-ready.


How to determine whether the minced meat is half cooked? The meat changes color from bright pink or red to dull, white or brown depending on the type of meat.

4. Place the minced meat in a separate container, let it cool, and squeeze the garlic into it through a press.

5. Cut the tomatoes into slices, grate the cheese on a fine grater, chop the parsley with a knife.

After the zucchini has stood, they need to be squeezed out well (either with a spoon or with your hands).


6. Beat sour cream with eggs, add salt and pepper and stir thoroughly.


7. Grease the mold with vegetable oil and place half of the grated zucchini in an even layer, then the prepared minced meat, the next layer is the remaining zucchini, place tomato slices on top. Pour sour cream and egg sauce over everything.
