Once in such a situation, many people try to save their favorite treat and put it in the refrigerator, but then they are disappointed because it does not look as appetizing as it used to be. The shape of the chocolate changes, and white spots appear on its surface. Given this bitter experience, we might conclude that chilling has a negative effect on chocolate. In fact, this is not entirely true.

Oxidation

Chocolate oxidizes on contact with air and light. Under their influence, the properties of the fat contained in the product change, which leads to a change in taste and the appearance of an unpleasant odor.

White chocolate is prepared without the use of cocoa powder, which is why it does not have this protection and is very sensitive to air and light. To prevent oxidation, store white chocolate in an airtight and light-tight container.

Diffusion

Substances from the environment can penetrate through the smallest openings in the packaging and affect the chocolate. In addition, water and alcohol from the filling can also be released into the environment.

In this regard, it is recommended to use airtight packaging to protect the chocolate from microbial attack. Due to their low water content, their growth is much slower.

Mixing flavors

Fat-soluble volatiles found in cheese, fish and meat flavors can be quickly absorbed into chocolate. Because of this, the product may acquire a not very pleasant smell and taste.

Heating

At high temperatures (for example, when chocolate remains inside the machine on a hot day), the larger Type VI crystal forms begin to melt at around 37 ° C. The consequence of this is that the original taste of the chocolate spoils and it no longer melts in the mouth.

Freezer storage

Tests carried out with chocolate placed in a freezer at -18 ° C have shown that the properties of the product are best preserved under these conditions. Therefore, the best way to preserve your holiday chocolate treats is by freezing them.

Refrigerated storage

Packaged chocolate can be stored in the refrigerator at any temperature and humidity level for several months without any problems. Its taste and smell will remain unchanged. If the package is opened, the chocolate must be transferred to an airtight container to avoid contact with air and to prevent the absorption of foreign odors.

Comparative tests between storing the chocolate at room temperature and storing it in the refrigerator showed that the difference in quality was clear. So don't believe the rumors: chocolate can be kept in the refrigerator. The main thing is to follow the rules.
