Today I want to invite you to prepare a variation of grated cherry pie according to my great-grandfather’s favorite recipe. A distinctive feature of this pie is the protein soufflé, which gives it a unique charm. My grandmother passed on the recipe for this pie to my mother, and my mother, in turn, passed it on to me. Previously, this pie was prepared only on holidays, so all the cooking processes were done by hand and took a lot of time. But since our kitchen assistants will come to our aid today, preparing a delicious Polish pie with cherries and protein soufflé will not take much time.

Pie ingredients:

  • Margarine 250 g
  • Eggs 4 pcs.
  • Sugar 4 tbsp + 1 bottle
  • Flour 3 cups
  • Potato starch 2 tbsp.
  • Soda 1 tsp.
  • Vinegar
  • Cherries (you can use fresh, frozen or canned)

Recipe for grated cherry pie (Polish):

1. First, separate the yolks from the whites. We use only yolks in the dough.

2. Add yolks, 4 tablespoons of sugar, slaked soda with vinegar and flour to margarine at room temperature. Knead the shortbread dough until a dense lump forms.

3. Separate a small piece from the dough, wrap it in cling film and put it in the freezer. Let's put the main part of the dough in the refrigerator for now.

4. Let's start preparing the highlight of our pie - protein soufflé. Beat the whites to sharp peaks, add 1 cup of sugar in several stages. Beat the whites until the sugar is completely dissolved. In order for the whites to beat well, the mixer container and beaters must be completely dry and clean. Before beating, add a pinch of salt or a few drops of lemon juice to the whites. Add starch to the whites and mix gently.

5. Next, roll out our dough on a pre-floured surface and place it in a springform baking pan. We form the sides. The dough will crumble and hold poorly, but thanks to this we will get a crumbly pie that melts in your mouth. It is best to use a mold with a diameter of about 30 cm. In this form, the layer of proteins will be thinner and they will settle less when the pie cools.

7. Take the rest of the dough out of the freezer and grate it on a coarse grater. Distribute the grated dough over the surface of the pie and sprinkle with a little sugar.

Quickly grate the dough and bake a cherry pie

To make a pie, you will need simple and affordable ingredients. In particular, take:

  • eggs – 1 pc.;
  • flour – 3 tbsp;
  • soda - tsp;
  • sour cream - 2 tbsp. l.;
  • butter – 200 g;
  • sugar – 150 gr;
  • cherries – 300 gr;
  • vinegar.

Kneading shortbread dough

At the first stage, you need to knead the shortbread dough. To prepare it, cut the butter (margarine) into pieces. Break the egg into a separate container, add sugar, butter, sour cream. Mix all the ingredients, add soda, slaked with vinegar, and a little flour. Gently begin to knead the dough, adding flour and rubbing the butter with your hands. To prevent the dough from sticking to your fingers, wet your hands with water.

Attention! If you don't have sour cream on hand, you can put mayonnaise in the dough. The taste of the cherry pie will not change.

Divide the finished dough into two unequal parts. Wrap the smaller piece in film and put it in the freezer, and the larger part in the refrigerator. Chill the dough in the refrigerator for 30 minutes.

Preparing the cherry filling

For the pie filling, choose only ripe and juicy cherries. Wash the prepared cherries well with water and remove all the seeds. Then squeeze juice from cherries, otherwise during baking it will leak onto the baking sheet and burn.

Advice! If you don't have cherries, you can use berries (such as black currants), cherry or... for the filling.

Baking a pie in the oven

Place the chilled dough (most of it) in a greased pan or on a baking sheet. Knead the dough with gentle movements, form it into a baking base and small sides (no more than 2 cm). Place cherries on top of the pie and sprinkle with sugar. To make the cherry filling thicker, the berries can be sprinkled with starch (2 tbsp).

The pie can be prepared with various fillings, but the dessert with cherries is especially popular. During the season, they use fresh berries, the rest of the time frozen berries, which do not lose their properties and taste. The cherry pie recipe is simple and very easy. Regardless of what type of dough is chosen, even a housewife who has no experience in this area can cope with the preparation.

This is the most common version of cherry baked goods. It turns out aromatic and tasty, ideal for quick cooking.

Ingredients:

  • butter – 110 g;
  • flour – 210 g;
  • egg – 1 pc.;
  • sugar – 110 g;
  • pitted cherries – 550 g;
  • water for filling – 200 ml;
  • cinnamon - half a teaspoon into the filling;
  • sugar for filling – 110 g;
  • starch for filling - 1 tbsp. spoon;
  • salt - in the filling, a pinch.

Preparation:

  1. The first thing to do is the filling. She needs time to cool down.
  2. Pour sugar, salt, cinnamon into a saucepan - use the proportions indicated for the filling. Pour in water (125 ml). Boil.
  3. Mix the remaining water and starch in a mug. Pour into syrup. Boil. Simmer for a minute.
  4. Place the cherries. Cook for three minutes. Cool.
  5. The dough must be prepared chopped. Mix butter, flour, sugar in a bowl. Grind. You will get a crumb.
  6. Pour in the egg. Knead.
  7. Roll out the resulting mass. Place in the form. Trim off excess edges. Take a fork and prick the surface. Place in the freezer.
  8. After half an hour, place the filling on the surface of the dough.
  9. Roll out the rest of the dough. Cut out the stripes. Spread over the filling to form a lattice pattern.
  10. Transfer to the oven. Set the mode to 195 degrees.
  11. Cook for half an hour.

With cherry jam in a hurry

Surprise your family by preparing a delicious and aromatic pie in a minimally short period of time.

Ingredients:

  • egg – 2 pcs.;
  • margarine – 200 g;
  • flour – 450 g;
  • vanillin;
  • baking powder - 1 teaspoon;
  • sugar – 200 g;
  • cherry jam – 200 g.

Preparation:

  1. Melt the margarine. To do this, use a microwave or water bath. Cool.

Ingredients:

  • flour – 370 g;
  • egg – 1 pc.;
  • margarine – 250 g;
  • sour cream – 2 tbsp. spoons;
  • soda - half a teaspoon, be sure to extinguish using lemon juice;
  • sugar – 50 g;
  • cherry – 950 g.

Preparation:

  1. For cooking, you must use softened margarine. Slice. Place in a bowl.
  2. Pour in the egg with sour cream.
  3. Add sugar and soda, quenching it with lemon juice.
  4. Pour flour through a sieve and knead.
  5. To cut in half.

  • cherry – 570 g;
  • cottage cheese – 320 g;
  • sugar – 270 g;
  • egg – 2 pcs.;
  • margarine – 130 g;
  • salt;

  1. Pour the eggs into the bowl. Add sugar. Beat.

  • milk – 200 ml.

Preparation:

  1. Melt the butter. Cool.
  2. Add granulated sugar. Mix.
  3. Separately mix the yeast with eggs and salt.
  4. Combine the two mixtures.
  5. Stir.
  6. Heat the milk.
  7. Pour into mixture.
  8. Add flour. Mix.
  9. Cover with a towel. Leave for a couple of hours.

  • fresh frozen cherries – 750 g;

  5. Cut the mass into pieces, one of which will be larger.

I have half cherries with cherries, because the latter was spoiling and I needed to use it urgently. Pick out the pits from the cherries. I always do this with a pin, taking out the bone from the side of the leg.

Next we make the dough for our future grated cherry pie. The butter should be softened (not melted!).
In a bowl put butter, powdered sugar, a couple of drops of vanilla essence (or something vanilla), salt, eggs. And I turn everything into a homogeneous mass.


Sift the flour and baking powder and add to the bowl to the butter-egg mixture. Continue mixing with the mixer for another 10-15 seconds until crumbs form. That's it, stop.


Now quickly form everything into a ball with your hands, and then divide the resulting dough into two unequal parts. I always make one a little more than the other. One part is 2\3, and the second, respectively, is 1\3.
Now wrap both balls in film or put them in bags and put them in the freezer for an hour so that the dough hardens a little.


Set the oven to heat up, 180". I always cover the pan with baking paper.

Drain the juice from the cherries (if any) and carefully mix with cinnamon and powdered sugar. For more flavor, you can add, for example, lemon or orange zest. Sprinkle the berries with starch.
Take out most of the dough and grate it on a large beet grater over the entire surface of the mold. Spread cherries over top.


Then we take out the second, smaller half of the dough and three on top.
Place the pie in the already preheated oven. It is important! Otherwise, the butter will simply melt and flow out, and because of this, the cake will become harder than it should be.

So. Oven 180" - and bake for about 40-50 minutes. Depends on the oven. I baked for 40 minutes in my electric one.

Wash the cherries well and remove the pits from the berries. Place them on the base in the mold, sprinkle with sugar and spread with frozen dough. Bake the pie in a preheated oven at 200 degrees. oven for half an hour. Before serving, sprinkle with powder.

On a note. To prepare shortcrust pastry, butter is always used. In any recipe, it can be replaced with a budget option - margarine.

How to cook with meringue?

Cherry pie made from shortcrust pastry will turn out even more tender if meringue is present in the filling.

  • margarine - 250 gr;
  • sugar - 100 g;
  • egg yolks - 5 units;
  • flour - 400 gr;
  • baking powder - 1 tsp.

Filling:

  • egg whites - 5 units;
  • sugar - 100 g;
  • starch - 30 g;
  • post oil - 50 gr;
  • vanilla sugar - ½ serving packet;
  • cherry - 200 gr.

Leave the oil at room temperature to warm up a little in advance, and divide the eggs into the white and yolk parts. Put the whites in the cold - chilled whites are used for meringue, they whip better.

First of all, prepare the dough: cut the butter into cubes, sprinkle flour and baking powder on top, add sugar. Rub it thoroughly by hand. At the end, add the yolks and knead the dough again. Knead and roll into a uniform, smooth ball. Separate a third of the dough and leave to cool for 40 minutes. Roll out the rest of the dough and place it in a mold lined with parchment. We make small sides around the edges. We bake the base for about twenty minutes at 180 degrees. Let him cool down.

While the base cools, beat the whites into a stable foam in a convenient way - with a mixer or a whisk. When the foam becomes very dense, not runny, add both types of sugar little by little, without stopping whipping. Pour in the oil in a thin stream, while reducing the whipping speed. A minute or two is enough for the oil to mix well with the protein mass.

Spread the finished meringue over the baked base, distributing it evenly over the entire surface.

Wash the cherries, leave them in a colander for a few minutes, remove the pits and spread them evenly over the surface of the meringue. If frozen berries are used, they do not need to be completely thawed. Spread the chilled dough on top of the entire filling. We bake at 180 degrees. within 35-40 minutes. Cut into squares and serve.

With added cottage cheese

An open pie with curd and cherry filling is a delicate dessert that family and friends will appreciate.

  • 2 eggs for dough and 2 for filling;
  • 3 tbsp. l. sugar for dough and 120 g for filling;
  • 100 g plums. oils;
  • 2 tsp. baking powder;
  • 300 g flour;
  • packaging of curd cream;
  • 300 grams of pitted cherries;
  • 500 grams of granular cottage cheese;
  • stack sour cream.

Rinse the berries in advance.

Grind the butter and sugar, then add the eggs and mix again.

Then sift the flour along with the baking powder and mix well.

Lightly grease the mold, spread the dough along the bottom and form sides to a height of 2-3 cm.

Combine all the dairy products in one bowl, beat in the eggs, add sugar. Work well with a blender. Spread the cottage cheese mixture over the base and evenly spread the berries on top.

Bake at 180 degrees. 50 minutes. Then let it cool, and only then remove it from the mold.

Shortcrust pastry pie with cherries and sour cream

Dough:

  • drain butter - 150 g;
  • flour - 300 gr;
  • baking powder - 1 tsp;
  • sugar - 100 g;
  • salt - a third of a teaspoon;
  • egg;
  • sour cream - 1 table. l.

Filling:

  • sour cream - 400 ml;
  • eggs - 2 units;
  • sugar - 4 table. l.;
  • starch - 2 table. l.;
  • pitted cherries - 1.5 cups.

As in previous recipes, the dough components need to be ground until smooth. Eggs and sour cream are added at the end. The result will be a stiff but soft dough that easily forms into a ball. Roll out the round lump into a layer and place it in the mold. Cool the base in the pan for 20 minutes.

Meanwhile, prepare the filling: mix everything you need for the filling (except the berries) thoroughly with a whisk until smooth. You will get a creamy liquid foundation. Pour it into a mold and place the berries on top.

Bake at 170-180 degrees for 45 minutes. Next, it needs to cool right in the mold, then put it in the refrigerator for at least an hour so that the sour cream filling hardens. You can then remove it from the mold, cut it into pieces and serve.

Canadian recipe

Shortbread dough:

  • drain butter - 150 g;
  • sugar - 2 table. l.;
  • yolk - 3;
  • salt (pinch);
  • baking powder - 1 tsp;
  • flour - 2 cups.

Filling:

  • cherry - 500 gr;
  • starch - 1 tbsp. l.;
  • sugar - 2 table. l.

Meringue:

  • egg whites - 3;
  • sugar - ⅔ cup.

First of all, prepare the shortbread dough by rubbing the dry ingredients with butter into crumbs. Then mix with the yolks. The resulting shortbread dough is similar to the previous versions. We put the base in the mold and form the sides.

Mix the cherries with sugar and place on the base. We send it to bake a little in the oven at 190 degrees for 15 minutes.

A few minutes before the end of baking the base and berries, we begin to make the meringue. First, beat the whites, then add sugar and beat the mixture until stiff peaks form. Spread the meringue over the berries. We turn the temperature up to 150 degrees. and bake the pie for another 15 minutes. The meringue will brown. Leave for another 10 minutes after turning off the heat, then remove from the oven, then from the mold.

Viennese shortbread cake with cherries

  • cherry - 500 gr;
  • drain butter - 180 gr;
  • flour - 200-230 g;
  • sugar - 140-180 g (if you want a sweeter pie, you can take more of the component);
  • eggs - 1;
  • baking powder, salt (a pinch);
  • vanilla extract - 2-3 drops;
  • almond flakes/crushed nuts - 2 tablespoons. l.

Beat eggs, butter and sugar together. Then add the sifted flour, baking powder and salt, pour in the extract. Knead the dough.

Grease the mold with oil. If desired, you can sprinkle with flaked almonds or crushed walnuts. Spread the dough out in an even layer. Distribute the washed cherries on top, lightly immersing the berries in the dough. Bake for half an hour at 180-190 degrees.

Open jelly pie

A simple and delicious open pie based on shortcrust pastry with jelly filling takes literally about an hour to prepare. As a basis, you can use any description of the dough from the above recipes. Before use, it is cooled in the refrigerator.

For filling use:

  • 15 g jelly;
  • 50 grams of cold water;
  • cherry - 400 gr;
  • sugar - 3 table. l.;

Line the pan with paper, spread the dough, forming high sides along the edges. Bake for 20 minutes in the oven, then leave to cool.

Meanwhile, prepare the filling. Pour water over the jelly, stir a little and set aside for a while.

Place the berries in a small metal bowl and place it in a water bath. Add sugar and stir. When the berries release juice and begin to boil, stir and cook for a few minutes. Place the berries in a colander to allow the juice to drain into a separate bowl. Transfer the swollen gelatin into the resulting cherry juice and dilute until it is completely dissolved.

Distribute the berries evenly over the cooled base, pour in the jelly and place in the refrigerator to harden.
