So, for now, without global goals, I decided to end this year with a knife fast. If you, dear readers, have not forgotten, knives are one of my many hobbies. Therefore, in the continuation of the rubric, we will talk about sharpeners. More precisely, about devices for holding the angle when sharpening knives.

So, an overview of tools for sharpening knives and their features. I must say that if you distribute sharpeners according to, let's say, functionality, then you get a list of several items (purely my classification):

  • sharpeners with fixation of stones and free movement of the knife when sharpening
  • sharpeners completely without fixation, an interesting and best option

I'll start with the simplest and most common option.

I think there are such sharpeners in every kitchen. Or a little different, this is my slightly advanced version.

There are two types of stones in it, for sharpening (carbide plates are installed instead of stones) and for finishing, but this does not make it more convenient to sharpen.

The only thing is that I sharpen a little differently ... All manufacturers advise holding a knife and driving a bar along it. But I'm embarrassed to sharpen like that. Therefore, I do the opposite - while holding the bar, I drive along it with a knife.

Knife sharpeners with stone fixation

Cool sharpeners, but I did not like the result of sharpening. Such sharpeners are well suited for straightening knives, but sharpening a knife ... I don’t know, I didn’t succeed. Yes, and two fixed angles do not really allow sharpening somehow in a special way.
