Peel the onion and cut into small cubes. Wash the carrots, peel and grate on a coarse grater.

Heat a little vegetable or olive oil in a frying pan. Put the chopped onion and fry, stirring, over medium heat for five minutes. Then add the grated carrots to the onion in the pan, mix well and fry the vegetables until lightly browned, stirring occasionally, for 3-4 minutes.

Wash chicken legs (if you wish, you can use any other parts of the chicken), wash well, dry, sprinkle with salt, pepper and your favorite spices.

Put the fried onions and carrots into a heat-resistant form.

Add peas (if you are using frozen peas, you do not need to defrost them first).

Rinse rice thoroughly under running water, add to onions, carrots and peas. Salt, pepper.

Put the chicken on top of the rice, add two cups of chicken broth or water.

Ingredients for making quick rice:

  • Rice - 1 cup
  • Water - 2 glasses
  • Onions - 1-2 onions
  • Carrots - 2 medium carrots
  • 1 bouillon cube
  • Salt to taste.

How to cook quick rice for a side dish:

  1. Finely chop the onion.
  2. Grate carrots on a coarse grater.
  3. Fry onions and carrots.
  4. Heat the water and dissolve the bouillon cube in it (if you are not using cubes, just heat the water).
  5. Put the rice washed in cold water to the vegetables and pour hot water with a cube.
  6. Salt and close the lid.
  7. Cook for 3 minutes on high heat, 7 minutes on medium heat and 2 minutes on low heat.
  8. Turn off the fire and let stand for 12 minutes.
  9. If desired, add tomato paste, sauce or ketchup to it.

The recipe for quick rice with minced meat is my variation of the first recipe. And this is no longer a side dish, but a full-fledged, satisfying second course, which we often cook in our family.

Ingredients for Cooking Quick Rice with Minced Meat:

  • Rice - 1 cup 300 ml
  • Water - 3 such glasses
  • Onion - 250-300 g
  • Carrots - 150 g
  • Minced meat (beef with pork or pure beef) - 250-300 g (but more is possible)
  • Vegetable oil for frying vegetables
  • Bouillon cube - 1-2 pcs. or your favorite spices, to taste
  • Tomato paste, sauce or ketchup - to taste
  • Salt - to taste.

How to cook quick rice with minced meat:

  1. Peel the onion and chop finely. I have frozen sliced ​​​​onions, so I won’t say how much it will be in the onions. Yes, bulbs are different sizes.
  2. Grate carrots on a coarse grater. My carrots are also prepared in advance.
  3. Lightly fry onions and carrots in vegetable oil in a deep frying pan.
  4. Add minced meat and rice washed in cold water.
  5. Heat the water, dilute the bouillon cubes in it and pour the mixture of rice, minced meat and vegetables. If you do not use cubes, then simply fill with water (boiling water is possible).
  6. Close the lid, wait until it boils and cook over high heat for 5 minutes. Do not open the lid!
  7. Continue cooking over medium heat for 10 minutes. At the end of this cooking period, open the lid and see if all the water has been absorbed and if the food has begun to burn. Add a little more water or oil if necessary.
  8. Add tomato sauce, seasonings (if you cook without a bouillon cube), stir well and put on the weakest fire for another 5 minutes.
  9. Turn off the fire and let stand for at least 15 minutes, and maximum until the family gathers at the table 🙂

Thus, the entire preparation of quick rice with minced meat takes about 35 minutes.

Like any recipe, my recipe requires adaptation. All stoves are different, pots and pans too. So my cooking time should not be treated as a dogma. You will see for yourself how long this dish will cook for you.

3. Lazy rice with chicken

How to cook lazy rice with chicken in the oven

  1. Chop the onion and fry in a pan.

  3. Spread the fried onions in the first layer on the baking sheet.
  4. Sprinkle corn on top (drain the liquid from the jar beforehand)

  8. Cover the baking sheet with rice and chicken with foil

Step 1

Prepare products. Cut the chicken legs in half, wash and then pat dry with paper towels.

Thoroughly mix chicken legs with spices. Leave the chicken to marinate for a couple of hours.

Step 4

Peel onions and carrots. Finely chop the onion.

Add vegetable oil to the pan and put on fire. Add onion to skillet.

Fry the onion while stirring until golden brown.

Grate carrots on a coarse grater.

Add the carrots to the pan with the onion and mix well.

Fry vegetables for 5-7 minutes while stirring, and then remove from heat.

Put the fried vegetables on the bottom of a heat-resistant form and level them.

Then put the rice on top of the vegetables and spread evenly. If using uncooked rice, then rinse the rice in cold water first.

Dissolve salt, spices and turmeric in water.
