It would seem, what else can be prepared from poultry meat when all the culinary variations have already been tried and learned by heart? Chinese chicken with cashew nuts, the recipe for which we will now look at, is one of those few dishes that can still surprise even the most picky guests. Such a bird takes, of course, not five minutes to prepare, but the result is magnificent: the savory combination of fillet, vegetables and nuts will appeal to all gourmets.

The range of products required to fulfill this culinary fantasy is very impressive, but if you take a closer look at this list, it turns out that every housewife will certainly have most of it.

Spicy Chinese Chicken with Cashew Nuts

Step-by-step preparation of Chinese cashew chicken

  1. Take an egg and separate the white from the yolk. We don't need the yolk, so you can pour it into a glass and use it later for scrambled eggs. Beat the whites with a whisk.
  2. Cut the chicken fillet into medium cubes or strips - whichever you prefer. Place the chicken in a bowl.
  3. Add starch and whipped egg white to the fillet and mix. We add salt, but don’t get carried away - the finished dish will contain soy sauce, and it is very salty, don’t forget about it.
  4. Peel the ginger root, grate it or finely chop it with a knife.
  5. Chop green onions.
  6. Cut the red bell pepper into strips or cubes (it is better that the cut is the same shape as the fillet).
  7. Heat a deep frying pan or wok with vegetable oil over high heat, place the chicken fillet in the resulting batter on it and fry, stirring continuously, for exactly one minute. By this point, the bird's meat should turn white.
  8. Remove the fillet from the pan, and fry the green onions and ginger in the remaining oil for one or two minutes.
  9. Add the bell pepper to the pan, stir and fry for another minute.
  10. Pour soy sauce into the pan, return the chicken fillet there and add cashew nuts.
  11. Now pour apple juice and hot chili sauce into the meat and vegetables, mix all the ingredients well and simmer over high heat for five minutes.

Chinese-style chicken with cashew nuts, the recipe for which we have just discussed, is traditionally served hot, straight from the heat, as an independent dish. But if you belong to the category of people who have no idea how you can eat meat without a side dish, boil the fluffy rice in advance.

Well, we’ve reached our favorite Thai cuisine. Thai Cashew Chicken is one of many recipes that came to Thailand from China. The original name of the dish is “Gai Pad Med Mamuang Himaphan”. The recipe for fried chicken with cashew nuts is very popular not only in many Thai restaurants, but also almost all over the world. This is a very simple dish that does not require any special culinary skills from you, but it can easily win your heart with its spicy aroma, mild spiciness and indescribable texture.

First, let's look at the ingredients.

You and I know very well that the best cashews in the world are grown in Thailand, mainly on the island of Phuket. Mamuang himaphan just means cashew nuts, but the main confusion is often associated with this, since the translation of Himaphan is an analogy to the Garden of Eden, and cashew nuts in their unpeeled form resemble small mangoes, therefore, literally translated, cashew is “Heavenly mango”, which can be translated into Russian as “Heavenly taste” or “Culinary heaven”. Here's a culinary pun :-)

For cooking we will need these same “Paradise mangoes”, that is, cashews. If it’s a problem to buy raw nuts, then you can easily get by with ready-roasted ones (not salted, of course), only in this case, you won’t need to pre-roast them, but simply add them at the end of cooking.

In addition to cashews, I recommend paying attention to the hot peppers that we will use for our dish. It should be spicy, but should not have a pronounced bitterness that dominates the taste. In the original, several types of hot pepper should be added. Use either small chili peppers, or your favorite proven variety of already ground pepper flakes, then you will be able to appreciate this spiciness and taste.

Shredded chicken fillet can be breaded in flour or tempura mixture before frying. This will keep the chicken juicier and add extra flavor. This time we cooked it in a hurry, so we didn’t use breading, and in general we simplified the recipe a little, but in the near future we will improve and share photos of cashew chicken prepared according to all the rules of Thai cuisine.

Ingredients:

  • Chicken fillet - 2 pieces;

How to cook cashew chicken:

Step 1

Cut the chicken fillet into strips.

Heat the vegetable oil in a frying pan and fry the cashews until golden brown, remove them with a slotted spoon and set aside. Lightly fry the chicken fillet. As soon as the fillet begins to brown, add cashew nuts and fry everything until golden brown.

Step 4

When the meat and nuts have acquired a fried color, add onions and leeks to the frying pan and fry for 2-3 minutes, then add green onions, hot peppers and fry for another 2 minutes.

Step 5

At the end of cooking, add soy sauce and oyster sauce, a little brown sugar, mix well and can be served.

Ingredients:

  • Chicken breast: 300 gr
  • Cashew nuts: 100 g
  • Garlic: 3-4 cloves
  • Sweet onion: 1 medium onion
  • Green onions: 1 bunch
  • Dried chili pepper (sweet): 5 pcs.
  • Sweet (Bulgarian) pepper: 1 pc.
  • Oyster sauce: 2 tablespoons
  • Palm sugar: 1 tablespoon
  • Soy sauce: 1 teaspoon
  • Fish sauce: 1 teaspoon
  • Vegetable oil

Preparation:

  1. We cut the chicken into slices the size of a finger, sweet peppers into the same pieces
  2. Chop the garlic and cut the onion into feathers.
  3. Wash the green onions and cut them into 3-4 cm segments.
  4. Mix sugar and all sauces in a bowl.
  5. Fry raw cashews in a tablespoon of oil over medium heat until the nuts turn golden. Remove to a napkin and set aside.
  6. Now fry the dried chilies: dip them in the same oil (if there is very little left, add a spoon) and fry for a minute or two over medium heat. The pods should become voluminous again, and the oil should acquire their aroma. Be careful, the chilies may explode! We take the finished chili out onto a napkin and set it aside too.
  7. In the same oil over low heat, fry the garlic for 1 minute, then turn up the heat and pour the chicken and onions into the wok. Fry, stirring, until the chicken turns white.
  8. Pour a couple of tablespoons of water and the pre-mixed sauce into the wok and mix thoroughly.
  9. Pour bell pepper into the wok, after a minute - cashews and green onions. Stir again and turn off the heat.
  10. Serve Gai Pad Honey with rice.

I have already mentioned more than once that when visiting Thailand, I highly recommend taking cooking classes there. They don’t last very long, but during this time you manage to prepare several dishes with your own hands, which means you remember and understand the process itself, try the recipe in practice, which is undoubtedly important so that the result is as similar as possible to a real Thai dish. Also, after training, you will receive a certificate of completion of the course and a book with recipes for the most popular Thai dishes.

I also cooked chicken with cashew nuts myself. To be honest, I didn’t know about such a dish before, I didn’t order it in restaurants, so I cooked and tried it here for the first time. When I saw the recipe, I immediately realized that it would taste wonderful and I was not mistaken;)

Ingredients:
- chicken - 200 gr
– cashews or almonds – 70 g
– carrots – 90 gr
— young corn — 90 grams (English: baby corn — young corn, it’s more of a variety, small corn, with a fine relief, looks like this —).
— onions — 60 g
- mushrooms (Jell mushrooms are used for this dish) - 60 g
– large dried chili pepper – 5 g
– green onions – 100 gr
- garlic - 2 heads
- soybean or sunflower oil for frying - 3 tbsp
- oyster sauce - 2 tbsp
- fish sauce - 1 tbsp
- sugar - 1 tsp

Preparation:
1. Let's cut all our ingredients.
Cut the chicken into long thin transparent pieces. Cut the carrots into half circles, corn along the cob, onions into slices, and mushrooms into thin slices. Cut the green onions into 3 cm long pieces, as well as the chili pepper. Finely chop the garlic.
We place all the products on a plate so that they are immediately ready for quick frying.


2. Heat soybean/sunflower oil in a wok (deep frying pan). Place cashew nuts in it and fry for about 3 minutes.
3. Add garlic and stir-fry until golden brown.
4. Add chicken and continue stir-frying until cooked through.
5. Place a mixture of carrots, corn, mushrooms and onions into the pan.
6. Add oyster and fish sauces, as well as sugar. Mix everything well.
7. Sprinkle chili pepper on top and stir until cooked.
8. Add green onions and mix everything well again. Turn off the heat. The dish is ready!!

Fried chicken with cashews is usually served along with boiled rice.
I really liked that despite the word “fried” in the title, it actually turns out to be a very healthy food. My photographs show that the chicken is not at all crispy and oozing with fat, as is usually meant by this word in European countries. The dish is more like stewed or steamed, and the vegetables retain their beneficial properties. This is great for people who prefer healthy, light food, and it’s useful for everyone;)
