  • a small pod of hot pepper;
  • 50 g tomato paste;
  • juice of ½ lime;
  • a few sprigs of cilantro.

  1. Let's start making curry sauce by preparing the spices. To do this, grind the coriander seeds with cumin powder and pepper in a mortar until smooth.
  2. Now let's make the pasta. Using a blender, chop the vegetables, roots and seeded peppers. Add a few tablespoons of water and mix again.
  3. Place the pureed mixture into a saucepan. Add salt, sugar, tomato paste, soy sauce, juice from half a lime, spices and coconut milk. Mix everything well.
  4. Heat the resulting mixture to a boil, but do not boil, pour into a bowl and decorate with cilantro leaves.

Chicken with vegetables Indian style

This Indian chicken curry recipe is very easy to prepare. This dish will perfectly serve as a second dish on the dinner table.

Ingredients required for its preparation:

  • olive oil – 40 ml;
  • onions – 2 heads;
  • ginger and garlic - pcs.;
  • chicken breasts – 2 pcs.;
  • tomatoes - 3-4 pcs.;
  • red sweet paprika pods – 1-2 pcs.;
  • mushrooms - 200-300 g;
  • young zucchini - 1-2 pcs.;
  • cream – 100 ml;
  • parsley leaves - a handful;
  • 2 pinches each of turmeric, ground cumin, garam masala, red pepper;
  • salt.

  1. Place the roasting pan in which we will cook on the stove and turn on low heat. Pour olive oil into it. Heat well, add finely chopped onion and cook for a few minutes.
  2. Cut the ginger into small pieces and place it in a saucepan. Stir, squeeze in the garlic and fry again for 1-2 minutes until golden.
  3. Pour the breast cut into pieces. We are preparing the same amount.
  4. We clear the middle of the bottom of the saucepan and pour the spices there. They need to be fried a little and mixed with the ingredients being prepared. We wait until the chicken turns golden.
  5. Coarsely chop the remaining ingredients and add to the meat. Pour in 50 grams of water, add some salt, mix well, set on low temperature, close and wait 5 minutes.
  6. Grind the tomatoes into puree and add to all ingredients. Cook at medium temperature, covered, until the paprika and zucchini are soft.
  7. Add cream to it, bring the mixture to a boil, sprinkle with parsley leaves, cover and turn off the stove.

This homemade curry recipe is as close to the original Indian curry as possible. Spices (except turmeric) need to be taken in grains, since we will make the spicy mixture for the food ourselves.

Required Products:

  • 1 kg chicken drumstick;
  • 2 onions;
  • 4 cloves of garlic;
  • 1 ginger root;
  • 1 handful of cilantro;
  • 100 ml milk;
  • 150 ml natural yoghurt;
  • a pinch of saffron;
  • 100 g almonds;
  • 1 teaspoon each of cumin grains, coriander, fennel seeds;
  • ½ teaspoon each of black peppercorns, cloves, cardamom seeds;
  • 30 g each of vegetable and butter;
  • 2 pinches of turmeric;
  • ½ cinnamon stick;
  • 1 laurel;
  • 1 chili pod;
  • salt.

Description of cooking step by step:

  1. For this dish, the meat must be prepared in advance. We remove the cartilage from both sides of the shin and divide it into 2 parts. Place in a bowl, pour in 100 ml of yogurt and leave to marinate overnight.
  2. Heat the milk well, add a pinch of saffron and leave to infuse. After a while it will develop a nice yellow color.
  3. Place the frying pan on the stove and add cumin seeds, coriander seeds, fennel seeds, cardamom seeds, cloves and black peppercorns into it. Keep in a hot frying pan until aromas appear and grind in a mortar, adding turmeric.
  4. Pour boiling water over the almonds. Let it sit for a quarter of an hour and remove the husks from it. Dry slightly and grind into almond crumbs.
  5. Cut the onion into quarters, crush the garlic and also cut it. Chop the ginger into small cubes. In the container where we will cook, mix the oil and heat it. Add the prepared ingredients and fry them until caramel-colored.
  6. Add cinnamon, bay leaf, half a glass of water, spice and almonds. Cover with a lid and keep on low heat.
  7. In a frying pan with a small amount of fat, fry the chicken for about 5 minutes. Then add the yogurt in which it stood overnight and simmer for another quarter of an hour.
  8. Pour the resulting sauce into the cooking vegetables and fry the meat until cooked. Place it in a saucepan, mix well, add salt, add chili and simmer for half an hour.
  9. At the end of cooking, add the remaining yogurt, some chopped cilantro and remove from the stove. When the chicken curry is poured into plates, be sure to crush it with green leaves.

Tomato curry with rice

A fairly simple recipe for curry with rice that goes perfectly with baked veal.

Required components:

  • ginger root – 1 pc.;
  • garlic – 3 cloves;
  • hot pepper – ½ pod;
  • caraway seeds - 1 teaspoon;
  • tomatoes, canned in tomato sauce – 300 g;
  • cardamom seeds - ½ teaspoon;
  • curry powder – 1 tbsp. spoon;
  • coconut milk – 150 ml;
  • Oleina – 30 ml;
  • cilantro and mint leaves;
  • rice – 800 g;
  • salt.

  1. Wash the rice and cook as usual.
  2. Cut the seeded pepper into thin strips. Cut the garlic and ginger into fairly large pieces.
  3. Heat the frying pan with Oleyna and add the prepared ingredients. Lightly fry and add tomatoes. Let this mass simmer until the tomatoes turn into puree.
  4. Add the mixture, sprinkle with spices, pour in coconut milk and heat, but do not boil. Pour this sauce over the cooked rice and sprinkle some green leaves on top.

Juicy fish in sauce

  • 1.5 kg river trout fillet;
  • 500 g onions;
  • 500 g sweet paprika;
  • 500 g champignons;

  • 50 ml olive oil;

Curry can be prepared from any part of the chicken, but today's step-by-step recipe with photos uses drumsticks. Using this principle, you can also cook thighs, wings and even fillets.

As for curry, you can buy a ready-made mixture (it is available in supermarkets). However, we decided to mix the spices ourselves, so you can remove what you don't like from the recipe, and, on the contrary, add what you do like (for example, replace the chili pepper with paprika).

    Chop 2 cloves of garlic, add ground chili pepper and ginger and season with 4 tbsp. yogurt. Marinate the chicken in this mixture and place it in the refrigerator for half an hour.

    Prepare the sauce. In a saucepan or high frying pan, heat a mixture of vegetable and ghee oils, in which we fry finely chopped onion, grated ginger and chopped garlic cloves (7 pcs.). The ingredients should take on a golden hue.

    After that, remove them from the stove and grind them with a blender.

    Add cinnamon, cloves, cardamom and bay leaves to the remaining oil and heat for no more than a minute.

    Then add onion-garlic-ginger puree.

    Add chopped tomatoes there and simmer for a couple of minutes.

    After this, add all the remaining ground spices.

    Mix the ingredients thoroughly and fry until the liquid from the tomatoes evaporates.

    Pour in 12 tbsp. yogurt and boil until the oil separates. Then pour in 3 tbsp. boiling water, wait for it to boil and simmer over low heat.

    In a frying pan, lightly fry the chicken in a small amount of oil.

    We transfer it to the sauce and simmer it all together on the stove for about half an hour.

    Serve the prepared chicken curry with a side dish of rice or potatoes.
