  7. Next, we make tomato juice. The result should be a homogeneous mixture without skin and seeds;
  8. Then pour the liquid tomato mixture into an aluminum container, put on fire and bring to a boil;
  9. Mix everything from time to time so that it does not burn;
  10. About 5 minutes after the start of the boil, add salt to the mixture, mix well and boil for 15 minutes;
  11. Next, remove the hot juice from the stove and immediately pour it into sterilized glass jars;
  12. We roll up the jars of juice with lids, put it upside down on the floor in a dark place;
  13. We wrap everything up with warm material, leave it to cool down gently;
  14. After cooling down, you can store it in a cool place, such as a cellar or basement.

Tomato juice for the winter: a recipe with vinegar

Component components:

  • Good ripeness tomatoes - 11 kilograms;
  • Granulated sugar - 500 grams;
  • 275 grams of 9% table vinegar;
  • Salt - 175-180 grams;
  • Allspice in peas - 30 pieces;
  • Carnation - 7-10 pieces;
  • Mustard - 3.5 small spoons;
  • Ground red pepper - a pinch;
  • 2-3 garlic teeth;
  • A pinch of nutmeg.

How to make tomato juice with vinegar for the winter:

  1. We fall asleep tomatoes in a large container, it can be in a bowl and sort it out well;
  2. Fill the tomatoes with cool water, rinse them from dirt and dust and remove all the stalks;
  3. Cut the tomatoes into small pieces so that they can be conveniently passed through a juicer;
  4. Next, we pass the tomatoes through a juicer. The result should be a homogeneous tomato juice without skins and seeds;
  5. Pour the juice into a large enamel container, put it on the stove and heat it up;
  6. As soon as the mixture boils, reduce the heat and leave to simmer for 30-40 minutes;
  7. After that, pour salt and granulated sugar into the mixture, boil for 10 minutes until the dry components dissolve;
  8. Peel off the husk from the garlic, cut into small pieces;
  9. Pour pieces of garlic into the tomato mixture, put cloves, allspice, mustard, hot red pepper, nutmeg, pour in vinegar. We mix everything, boil for about 15-20 minutes;
  10. In the meantime, we thoroughly rinse the jars, clean them with a washing solution or baking soda powder from dirt and dust. Rinse several times with cool water;
  11. The container must be sterilized over steam or in the oven;
  12. Pour tomato juice into sterilized jars to the very top;
  13. We close the container tightly with lids so that the liquid does not leak;
  14. Turn the top upside down and put it on the floor, cover it with a warm blanket. Leave it to cool completely;
  15. We store the prepared juice in a cool place at a temperature not exceeding +20 degrees.

  • For a sweet tomato juice, it is best to use overripe vegetables. Unripe vegetables will make the drink sour, which is only suitable for dressings;
  • If waste remains after cooking, then they can be left for making sauces;

  • Fresh tomatoes - 8 kg.
  • Sterile jars

Wash ripe, red, soft tomatoes, cut into 4–6 pieces, then put them in a saucepan and put on fire. Tomatoes are cooked over medium heat for about 40 minutes after boiling. Then, when you get a pulp with a consistency similar to porridge, rub the boiled mass through a fine sieve to remove unnecessary skins and seeds.

The resulting tomato juice will need to be boiled over low heat for about 2 hours, checking it at least once every 20 minutes and stirring - the paste will begin to thicken from the bottom, so you will need to constantly stir it until you achieve the desired degree of density.
