Lobio means beans in Georgian, but how to cook them is another question. The dish can be made spicy, meaty, lean, with or without nuts. You can also take any beans - grain or green beans, but the tastiest lobio is obtained from green beans - with a spatula. You don’t have to add carrots to this dish, as Georgians do, you can add more tomatoes or peppers, the main thing is that the taste suits you.

Usually, if this is a meat recipe, they put beef or lamb in the lobio, but I suggest preparing this dish with chicken.

I will not claim that this is a Georgian recipe, rather, a variation on a theme, so I do not indicate the cuisine. Green bean lobio with chicken turned out very juicy, tasty and was eaten with pleasure.

To prepare lobio, take the following products.

Sort out the green beans, rinse well, trim off the tails on both sides, and cut into manageable pieces. If the beans are no longer very young, then remove the vein separating the blades.

Cut the carrots into half rings, sweet peppers into squares, onions into quarter rings, chop hot peppers as desired, chop the garlic.

Cut the chicken fillet into small pieces.

To prepare lobio from green beans with chicken, it is most convenient to take a thick-walled saucepan or cauldron. Heat vegetable oil in a saucepan. Fry the chicken pieces until golden brown.

Add onions and carrots. Stirring, fry for 2 minutes.

Add chopped tomato and spices to the pan, add salt. Fry for 2 minutes.

Fill with water as shown in the photo. Close the lid and simmer for about 5-10 minutes. The younger the beans, the less they cook.

Then, when there is some liquid left, add sweet peppers, hot peppers and garlic. Simmer for a couple more minutes.

And finally, sprinkle the dish with herbs, preferably cilantro, but I used dill and onions.

To prepare bean lobio with chicken, you will need:

Red beans – 500 g
onion – 1 pc.
chicken fillet – 100 g
cilantro – 1 bunch

How to cook bean lobio with chicken.

1. Wash the pre-soaked beans, add fresh water and cook for 20 minutes. Then drain the water and simmer for another 20 minutes.
2. Fill the beans with broth or water again and cook for 20 minutes. Add chopped onions 15 minutes before cooking.
3. Chop the herbs and garlic and place in the dish 7-10 minutes before they are ready.
4. The last thing to go into the lobio (5 minutes before it’s ready) is the chicken - it’s pre-cut into narrow strips.

Unfortunately, I don’t have a single Georgian friend who could treat me to real lobio, but in my version I simply adore this dish.

All the ingredients for its preparation are simple, accessible and not particularly expensive at any time of the year.


It is better to soak the beans a day before cooking; mine stood even for more than a day. After soaking, the beans will cook faster and will get rid of harmful components.


The next day, drain the water from the beans, rinse them, fill them with fresh water and send the beans to cook. Be prepared for the fact that even after soaking it will cook for 1.5-2 hours.
When the beans are almost ready, start with the vegetables. Cut the onion into half rings and throw it into the frying pan.


Cut the carrots into cubes and throw them into the pan with the onions.


Simmer the vegetables for 12-15 minutes, stirring occasionally.


Throw in bell peppers. You don’t need a lot of it, but it’s fragrant for me.


Cut the red hot pepper in half lengthwise, remove the seeds and cut into small strips. We send it to the rest of the vegetables.


Add chopped garlic there too.


You can chop the parsley in advance so as not to waste time while the vegetables are stewing.


When the vegetables are almost ready, transfer them to the beans, which have almost no water left.


Cut the chicken breast into cubes and fry in a hot frying pan until golden brown.


Then we transfer it to the beans. We also put tomato paste here. You can add a little water, stir and simmer over low heat for about 10 minutes.


While simmering, add suneli hops and peppers. Peppers are more aromatic, of course, if you chop them yourself right before use, but you can also use a ready-made ground mixture of peppers.


When we turn off the stove, sprinkle the dish with chopped parsley and cover with a lid for another five minutes.


After this, the aromatic dish is completely ready, but you may not know anyone at the table, I’m sure everyone will come running to this wonderful smell that will come from the kitchen.

We have been planning to buy baking pots for a long time, the food cooked in them looks very appetizing. And now, the pots have been purchased, but what exactly should you cook in them? On the advice of my sister, the first dish in the pots was a Georgian dish - bean lobio.
The traditional recipe is very different from our improvisation, since we added chicken meat and did not have on hand the various greens needed for lobio.
However, the dish in pots still turned out tasty and very satisfying.

To prepare lobio from beans and chicken we will need:
- red beans (soaked overnight in water),
- chicken breast,
- onion,
- carrot,
- red bell pepper,
- tomato paste,
- herbs and spices to your taste,
- heavy cream (optional)
- a little olive oil for frying.

Recipe with photos step by step:



First, cut the carrots into small strips or three and chop the onions. Fry them in a frying pan with a drop of oil until half cooked.




Cut the sweet pepper into small pieces.




We clean the chicken breasts from membranes and cut them into small cubes.




Prepare the dressing sauce. We dilute the tomato paste with water until it becomes more liquid. Salt, pepper and add all suitable herbs and spices.





Now you can start forming layers in pots. Place a layer of onions and carrots on the bottom of each pot. Place a layer of beans on it. It was pre-soaked in water overnight, which will significantly reduce the cooking time.




Place chopped bell pepper on the beans.




Chicken pieces.



The last layer is again frying onions and carrots. Fill the pots with tomato sauce. There should not be too much sauce, about a third should be filled, since the remaining products will also release juice during the cooking process.





The final touch is a teaspoon of cream in each pot. This will add fat content, but will not significantly affect the taste, so if you are concerned about the calorie content of the dish, then you can skip this ingredient with a clear conscience.



We put our pots in the oven for about an hour at 200 degrees. I determined readiness by testing the beans, it is precisely their softness that you need to wait for, everything else will be ready in half an hour.



When the beans are soft, it's time to remove the pots. Cool them slightly and serve. You can eat it straight from the pot, or you can put the aromatic lobio on a plate.
The taste was amazing. We can say that the first experiment with pots was a success.
But you can cook not only in pots. So if you don't have them, there's no reason to be upset.
