    Salad for the winter with green tomatoes and bell peppers

    Very tasty vegetable salad, which contains a lot of vitamins.


    Ingredients:

    • Bulgarian pepper of all colors 1 kg.
    • green tomato 2 kg.
    • onion 1 kg.

    For marinade:

    • refined oil 1 tbsp.
    • vinegar 9% 1 tbsp.
    • granulated sugar 80 g.
    • warm water 300 ml.
    • coarse salt 50 g.

    Cooking:

    First you need to prepare the vegetables, rinse and let them dry. Then we cut the tomatoes into medium-sized slices, cut the onion into half rings, divide the pepper into 6-7 parts.

    Let's start preparing the marinade. Pour water into the pan, pour salt and sugar, then add vinegar and refined oil, mix. We send vegetables to the pan with marinade, mix the resulting assortment and close the lid. Let the vegetables brew for 2 hours.

    Then we put the vegetable mix on the stove and wait until it boils, then reduce the heat and cook for 10 minutes.

    We fill the jar with a delicious, vitamin salad and save it until the very winter, just at this time it will be on the table in time.

    Real jam! Another simple salad with tomatoes and carrots

    Ingredients:

    • green tomato 3 kg.
    • carrots 1.5 kg.
    • onion 1.5 kg.
    • granulated sugar 150 g.
    • coarse salt 100 g
    • refined oil 300 g
    • black peppercorns 5 pcs.
    • vinegar 9% 60 g.
    • bay leaf 5 pcs.

    Cooking:

    We wash the tomatoes, dry them, remove the green part and cut into cubes. Grate pre-washed carrots on a larger grater. We cut the onion into rings, if you have a large onion, then cut it into half rings.

    Pour vegetables into a deep container and salt well, and leave in this state for at least 10 hours. During this time, juice is formed, it must be drained into another bowl, but not poured out, we will need it, as it will be used as a marinade.

    Add refined oil, sugar, vinegar to the juice and put on fire. Add peppercorns and bay leaf to the marinade. Stir regularly and bring the mixture to a boil. Pour boiling marinade into vegetables and mix it.

    Cook the salad for about 40 minutes over medium heat, stirring often so that the vegetables do not stick to the bottom. After the allotted time, immediately fill the jars with ready-made salad. Closed jars are turned over and wrapped. When the jars have cooled, put them in a cool place before the onset of winter.

    Salad with tomatoes for the winter "Lick your fingers!"

    In this recipe, we will stuff tomatoes with various vegetables and seasonings.


    Ingredients:

    • green tomato 3 kg.
    • carrots 0.5 kg.
    • Bulgarian pepper 0.5 kg
    • a couple of heads of garlic.
    • greens (parsley, dill) 1 bunch.
    • horseradish leaves 2 pcs.
    • ground black pepper 1 tbsp.
    • vinegar 9% 1 tbsp. to the bank.
    • salt one tsp
    • sugar one tbsp.

    To prepare the brine, we need 1 liter of water and 1 tbsp. salt.

    Cooking:

    Thoroughly wash vegetables and herbs, wait until they dry. Pass the garlic through a press. We clean the pepper from seeds and cut into slices, three carrots on a grater. Make an incision on top of the tomato to get the inside with a teaspoon. After extracting, cut the pulp into small sticks and sprinkle with sugar, salt, pepper and garlic and mix everything well.

    We fill the empty inside of the tomato with chopped products. We fill the bottle with tomatoes, rearranging each layer with greens, adding 1 tbsp to each jar. l. vinegar.

    Simple tomato and cabbage salad

    Ingredients:

    • green tomato 200 g
    • cucumber 200 g
    • white cabbage 300 g
    • sweet pepper 200 g
    • carrots 100 g
    • garlic one clove.

    • salt to your taste.

    Cooking:

    Pickled green tomatoes in a jar


    Ingredients:

    • green tomato 3 kg.
    • carrots 100 g
    • garlic one head.
    • onion 3 pcs. medium size.
    • parsley one bunch.

    For marinade:

    • vinegar 9% 2 tbsp.
    • sugar 4 tbsp
    • salt 2 tbsp
    • bay leaf a couple of things.
    • carnation 3 inflorescences.
    • black pepper 7 pcs.
    • allspice 5 pcs.

    Cooking:

    We clean the carrots and cut into slices. Wash and chop wet parsley, the finer the better. We clean the garlic and finely chop. On all the tomatoes we make an incision on top and place the carrots, garlic and herbs. We put the stuffed tomatoes in a jar.

    To the tomatoes, add the onion, cut into thin rings, into the jar. Pour in boiling water and leave for 10 minutes. After the allotted time, the liquid is drained into a separate bowl. Pour boiling water over vegetables again. Add sugar, salt and spices to the cooled liquid, bring to a boil and leave to boil for 10 minutes without reducing the heat. Turn off the stove, add vinegar to the marinade. We drain the liquid from the jars and pour the already boiling marinade and cork the container.

    Not so long ago, hostesses sterilized filled jars, but this is a long and inconvenient process. It is better to sterilize the jars immediately, then spread the salad and roll it up.

    • Bulgarian pepper 1 kg.
    • hot pepper 2 pods.
    • onion 1 kg.
    • garlic 3 heads.
    • salt 120 g.
    • sugar 120 g.
    • vinegar 9% 250 ml.
    • refined oil 230 ml.
    • water.

    Cooking:

    Cut the tomatoes and red pepper into cubes. Three carrots and hot peppers on a grater. We put all the ingredients in a saucepan, add refined oil and put on fire until it boils. Do not rush to immediately pour a lot of water, the tomatoes will release juice. When the contents boil, add salt, sugar and vinegar. Reduce heat and simmer vegetables for a few minutes.
