The first question I asked myself was, what is real fries?

After that, I wondered, how does McDolds make french fries?

But I will tell you that the author set out to reveal the secret of McDonald's.
To begin with, he identified 4 characteristics of the perfect french fries.
1. The crust should be very crispy, but not hard.
2. Inside the potato should not be empty, it should be soft and airy and have a pronounced potato flavor.
3. Potato should be even golden color.
4. Potatoes should remain tasty and crispy for at least as long as it takes to eat them.
Having defined the criteria, he went to McDonald's to buy a serving of raw frozen fries. Talking about a pregnant woman, and therefore a little country wife, did not help him.

Then he asked for help on his Facebook.

His more resourceful reader, came up with some incredible story, the essence of which I did not fully understand, but it clearly featured Harold McGee. And he did it!

Having studied the potato, our hero noticed that its surface is smooth, but at the same time small bubbles are visible on it, which indicates that it has already been fried once. The size of the potato turned out to be exactly 1/4 inch, which is 2.5 cm: 4 = 63 mm.

Perhaps the researcher decided the matter in the oil? It turned out not. A portion of potatoes, fried by him in ordinary peanut butter, disproved this hypothesis. He got the same potato.

The whole point was that McDonald's was using the traditional double method, but not traditionally. Usually potatoes are fried in oil at a fairly low temperature (about 140-160 degrees), and then at a higher temperature (190-200 degrees). This sequence helps to achieve a crispy crust. The fact is that part of the water in the potato is hidden deeper in it than the other. It takes more energy to push it out. During the first frying, some of the water is evaporated from the potato, allowing the oil to take its place and come into direct contact with the potato cells. At the same time, the water that is hidden deeper remains. Soon the individual starch molecules are released from the larger granules by the action of the hot oil. McDonald's, on the other hand, first boils the potatoes in boiling water for a short time, dips them in hot oil for 50 seconds, freezes them, and then dips them again in very hot oil for 3-4 minutes.
What is all this for?

Cooking in hot water achieves a light golden color instead of a dark brown, and also helps the potatoes retain their firmness and integrity when frying in hot oil. By dipping an almost cooked potato into the oil, you need less time to crust, which means the potatoes are less likely to burn.

The moisture in the potato turns into ice, or rather, sharp, uneven ice crystals. These crystals break down the cellular structure of the potato, making it easier for moisture to escape from the potato and turn into steam. Why is this needed? To quickly form a beautiful crust. That is, it allows you to improve the result achieved by the double method. At the same time, as Katya noticed in this post, due to the fact that the potatoes are very chilled, the outer layer does not overcook, the inner one warms up to the correct temperature, the potatoes turn out to be crispy and keep this crunchiness for a long time.
Behind all this is a more complex chemical process than I have described here. But I don't have the strength to translate it all. The curious and those who know the language will read it themselves. The lazy and the ignorant have something to strive for.

Here's the recipe for you:

1 kg potatoes (about 4 large potatoes)
2 tbsp vinegar
2 liters of vegetable oil
salt
1. Peel the potatoes. Cut off the rounded parts on all sides so that you get a rectangular bar. Cut it into strips 0.6 cm thick, then cut each strip into sticks 0.6 cm thick.
2. Put the potatoes in a bowl of cold water for 30 minutes.
3. Put the potatoes in a saucepan, add vinegar, 1 tbsp. salt and 2 liters of water.
4. Bring the water to a boil over high heat. Boil 10 minutes. The potatoes should become soft, but should not fall apart.
5. Drain all the water, spread the potatoes on paper towels and leave to dry for 5-10 minutes.
6. At this time, heat the oil in a cast-iron roaster or deep fryer to 200 gr.
7. Using a slotted spoon, dip 1/3 of the potatoes into the oil. The temperature will drop to 180. Cook for 1 minute, stirring occasionally with a slotted spoon. Transfer to paper towels.
8. Repeat with the rest of the potatoes in 2 passes, each time heating the oil again to 200 gr.
9. Let the potatoes cool to room temperature, about 30 minutes.
10. For best results, freeze potatoes overnight or up to two months.
11. If you are freezing potatoes, use new oil. Heat the oil up to 200 gr. on high fire.
12. Dip in 1/2 of the potatoes and fry for 3-4 minutes until golden and crispy. Adjust the temperature so that the thermometer shows 180 gr.
13. Transfer potatoes to paper towels and season with salt immediately.
14. To keep the first portion of potatoes warm, store them on a baking sheet in preheated to 100 gr. oven.

What does the air fryer have to do with it, you ask?

And despite the fact that I conducted two experiments with it.

Once I cooked potatoes in the traditional double way, dividing them into two portions.
One portion was fried in oil, the other in an air fryer.

Sliced ​​potatoes were soaked in water for half an hour, dried.

A portion of potatoes (for the air fryer) was mixed with a teaspoon of oil. According to the manufacturer, 1 tablespoon of oil is needed for 1 kg of potatoes.

I heated the oil and deep fryer to 140 degrees.

Fry one serving of potatoes for 3 minutes in oil.

Another in the air fryer, increasing the time to 10 minutes. The manufacturer recommends 15-20 minutes for french fries. My guess is that hot air doesn't conduct heat as fast as oil.

Transferred to paper towel.

I heated the oil and deep fryer to 190 degrees, fried the potatoes in oil for 1 minute, in the air fryer for 5 minutes.





Conclusions: the oil-fried potatoes came out much more like french fries, and to be completely honest, they tasted better.
The potatoes cooked this way in the air fryer were also delicious, but being crispy at the tips, they remained completely soft in the middle.

Only again, in the air fryer, I kept the potatoes a little longer, but taking into account the fact that they were already boiled.



She froze potatoes in two bags, signing them.

The results were unexpected for me.

French fries fried in oil were similar to McDonald's, but not quite the same. And very oily. Just the way it feels in your mouth. The center was almost empty.
But the potatoes from the air fryer turned out to be very tasty. Evenly crispy, non-greasy, with a soft center.
But it's delicious in a different way. It’s different from McDonald’s, but given the calorie content, I’ll rightly prefer potatoes from an air fryer, and now I’ll try to cook fries for my child only myself.

About the variety of potatoes. Certainly he is important. In our reality, I was only able to buy French fries in Azbuka Vkusa, intended for frying.

In addition, it would be more correct to fry the second portion of potatoes in a deep fryer, which will keep the exact temperature of the oil. I also had dances with tambourines with a thermometer.

What does my experiment say? Yes, nothing. In order to come to unambiguous conclusions, you need to cook hundreds of servings of different varieties of potatoes in different ways, varying the time of frying, boiling, etc.

According to the proposed second method, the potato, however, tastes very close to the potato from McDonald's.
You can’t cook such potatoes in an air fryer, no matter how hard you try.
