Several years ago, I was seriously puzzled by the question of proper nutrition. I read a whole bunch of literature on this topic, gave myself some "educational program", so to speak. As a result, I learned a lot, gave up a number of products in my daily diet (left high-quality proteins, complex carbohydrates; removed "bad" fats, snacks and snacks such as sandwiches, other "fast" carbohydrates). Revised the diet - reduced portions and increased the frequency of meals (4-6 times a day, if possible).

Thus, slowly but surely, I lost 13 kg. To be honest, this result amazed me, and proper nutrition and a feeling of lightness have already become so much a habit that I’ve got used to making all meals (I mean everyday ones) as much as possible. Now my credo is in the kitchen: to cook tasty, healthy, and without complication. Of course, I also love complex dishes, festive and even those that are better prepared according to original recipes (for example, cakes, muffins, pies - but more often I bake them not for myself, but for loved ones :).

Today I propose making dietary chocolate orange muffins using flaxseed and oatmeal flour. I will say right away that the consistency of the muffins turns out to be moist inside and very tender, they even somewhat resemble pudding muffins (those that are made in a water bath).

Flaxseed baked goods are rich in fiber, vegetable protein, polyunsaturated fatty acids, folic acid, vitamins B1, B2 and B6, antioxidants, potassium, magnesium, zinc. What is especially pleasant is that flour does not have a specific sharp taste (it is neutral), and in combination with cocoa powder and orange peel, it is just a bomb!

Flaxseed muffins: ingredients

  • crumbly cottage cheese - 150 g;
  • milk - 70 ml;
  • flaxseed flour - 1 tablespoon with a slide;
  • whole grain oat flour (* can be substituted with ground oatmeal *)- 1 tbsp. with a slide;
  • wheat bran (replacement with oatmeal is possible) - 3 tbsp;
  • egg - 1 pc;
  • medium apple - 1/2;
  • cocoa powder - 2 tbsp;
  • zest of one orange;
  • cane sugar / stevia / syrups - to taste (*I use ).

Flaxseed muffins: making

Turn on the oven to warm up (180 degrees).

Add milk to the curd. Mix with a blender until smooth. Add flaxseed flour and stir again.

Peel half of the apple, grate, send to the dough. Grind everything thoroughly with a blender until puree.

Add oatmeal, bran, egg. Stir the dough. Then add cocoa, sugar, or to taste and orange peel grated on the finest grater.

Having mixed everything thoroughly, put it in the molds (I have silicone ones; if you have others, do not forget) and send to the oven for 40-45 minutes.

  • Wheat flour - 80 gr. We will definitely need it, because if you use only pure flaxseed flour, the product will turn out to be not very tasty due to the unusual texture of other flour.
  • Flaxseed flour - 70 gr.
  • Baking powder for dough - 1/2 tsp.
  • Sweetener - 1 tsp You can use your usual sugar, or replace it with honey, maple syrup, or the artificial sweetener you use.
  • Salt - a few pinches to balance the flavor.
  • Flaxseeds - 3 tbsp l. We will use them to create a more unusual texture of the dough, in addition, they look more interesting with flaxseed cookies.
  • Milk / water - 60 ml.
  • Vegetable oil - 2 tbsp. l.

Flaxseed Cookie Recipe

  • In a deep bowl, combine milk or water with sweetener and salt, and then, when the ingredients are already well mixed, pour in the vegetable oil.
  • Combine two types of flour in a separate container, mix thoroughly and add baking powder and pre-prepared flaxseeds.
  • Pour the dry part into the liquid ingredients in parts and first with a fork, and then knead a very dense and plastic dough with your hands.
  • Let it rest a little on the table, lightly covering the top with a damp towel or wrapping it in plastic. This can take 15-20 minutes.
  • Lightly dust the work surface with flour and start rolling out a very thin layer of dough, about 5-7 mm thick.
  • Preheat the oven to 160 degrees Celsius and send the cookies there for 5-10 minutes. It is very important to keep an eye on the dessert in the oven, as the capacities of different types differ. This is why we advise you not to do anything else while making flaxseed cookies.

When the surface is covered with a golden crust, you can safely take the cookies out of the oven and try them immediately, or spend a few minutes decorating them, which we will describe in the next paragraph.

Decoration for festive serving

What you need: half a glass of flaxseed, a glass of kefir, 2 tbsp. tablespoons of sugar, salt, soda - on the tip of a knife, flour (you can take 2 glasses of kefir, then the amount of flour will increase), cinnamon (we do not add).

How to do: Scroll the flaxseed on a coffee grinder - you will get a glass of flaxseed flour (so twist it in parts if the grinder is not very powerful), unscrolled seeds may come across in the flaxseed flour - it only tastes better, but you can try it yourself, which is best for you, experiment and observe, you will still need to bake 2-3 times until you adapt. Pour sugar, salt into kefir, stir well. Then mix kefir and flaxseed flour, and add flour (add soda to flour), how much the dough will take. The dough should not be steep - it turns out to be sticky, soft, when rolling it needs to be well tormented.

UPD For some time now, I began to take ready-made flaxseed flour, because it is fat-free. And linseed oil should not be overheated, it turns into a carcinogen. If you overexpose cookies in the oven, they will become very tough and acquire a fishy smell - then you cannot eat them. Therefore, sometimes for taste I add a handful of freshly ground seeds, but more often I do without it.

Wheat flour can be substituted with gluten-free mixture or green buckwheat flour. Green buckwheat flour is generally my discovery. It can be used to bake bread, make pancakes and pancakes - it behaves like regular flour and no buckwheat aftertaste (although you can smell the smell just a little). I buy Garnets, and for bread, pancakes and pancakes, you can beat green buckwheat soaked for (4-5 hours) with a blender, you immediately get a dough.

Bake at 180 degrees for 15 minutes. But that will of course depend on the thickness of the cookie and your oven. Please note: in no case should these cookies be overexposed in the oven - they acquire an unpleasant fishy aftertaste (this oil is oxidized), becomes completely hard !! So after 10 minutes just try it. But do not hold for more than 20 minutes at any thickness. We used to make fluffy cookies, but now we are looking for crispy ones in a heap, so we are making them thinner.

This cookie is unique in that it contains no eggs and is low in fat. Flaxseed contains a lot of vegetable oil, so we don't add anything else. But for this reason, I do not recommend using ready-made flaxseed flour, but making a portion of the flour just before baking from seeds - the butter in the finished flour goes rancid very quickly. We buy flaxseed in a pharmacy, and it comes in different packages, we found the cheapest option - 200 g packs in cellophane, for 17 rubles.

Due to the low fat content of the cookies, it becomes dry the next day. It tastes best when it is still warm. But we eat for a few days, if it remains. Some kids don't like these cookies - not sweet. But now all our friends and girlfriends eat with pleasure, they are used to it. :) By the way, you can add sugar to taste, but since we are claiming a recipe for a healthy diet, do not get carried away! :)

We modified the recipe because we do it very often and always for the company. Instead of one glass of kefir, we take half a liter. Accordingly, the amount of flour increases (we take flour of the first or second grade). From half a liter of kefir, cookies are obtained for two large baking sheets - this is such a bowl, it is not very clear from the photo, but, in general, quite a lot, but all the more you need to eat it immediately, fresh. :)

And in the recipe from Malakhov's program, which I found, there is only 1 tbsp. a spoonful of flour!

To make it, you will need ground flax seeds (half a glass). Large fragments of ground seeds add spice. Add 1 spoonful of plain flour, a teaspoon of cinnamon, a tablespoon of sugar, add our kefir with soda here. And knead the dough.

These biscuits are made without an egg, which makes them the perfect Lenten meal. The consistency of the dough should be like dumplings. We roll out a layer 0.5-0.7 centimeters thick and cut it into molds. It is baked in 5 minutes at a temperature of 210-218 degrees. "
