How to properly cook chokeberry jam. Chokeberry jam: recipes

The fruits of black chokeberry have a tart specific taste and a high content of useful elements. Many people today mistakenly believe that the product is not suitable as a raw material for making desserts. Chokeberry jam has an unusual taste, but for proper preparation, you need to know a number of important subtleties.

To get a tasty treat from black berries, it is important to follow the technology of its preparation. For recipes, only ripe fruits are selected, unripe and spoiled ones are removed. Rowan fruits have a rather strong thick skin, so you cannot get a tasty treat without preliminary processing.

To give the proper softness property, the following methods are used:

  • boiling water treatment;
  • aging in boiling water;
  • blanching.

After softening the skin, the berries will acquire the ability to soak in syrup, and the jam will turn out to be soft in consistency. Many people note the bitter taste of chokeberry. A large amount of sugar allows you to get rid of this deficiency. On average, the amount of sand when making jam should be 2 times the weight of the berries.

After picking chokeberry berries, the first thing to do is to select them. To do this, choose ripe fruits without signs of rot and damage. Excess debris and leaves are removed. Next, it is important to rinse the berries well, which can be done under a stream of ordinary warm water, since the berries are resistant to external influences.

Next, a method of processing the fruit is selected to soften the peel. With a small amount of fruit, you can pour boiling water over them several times. With a large amount, they are placed in a large container, poured with boiling water and kept on fire for 5 minutes. Next, the berries must be transferred to a colander and wait for the water to drain completely.

Along with other fruit and berry plants, chokeberry jam, popularly called chokeberry, is also popular.
Once imported from Canada, chokeberry was grown in Russia as an ornamental tree. But the properties of its berries attracted V. Michurin, who was able to prove that the fruits contain a large amount of useful elements that make chokeberry not only a healing, but also quite nutritious product.
Since then, housewives have added chokeberry jam to the menu of winter preparations. They did not seek out special delights in the invention of recipes - the methods of cooking almost any sweet product are always the same. It's just that each housewife makes her own individual additions, which makes any recipe unique, be it jam or.
Preparatory procedures.
Whatever berries are used to make jam, they must be pre-processed. Only ripe fruits are used for harvesting. Concerning chokeberry - it is harvested in late autumn, when severe frosts begin. The low temperature deprives the berries of their unpleasant bitterness.
Chokeberry is cut from the tree with brushes - so it will be more convenient to soak them. To finally rid the berries of bitterness, they are kept in cold water for another day. During this time, the fluid should be changed twice.
After the water procedure, each berry is separated from the tails and combs, then sorted. Spoiled mashed fruits are removed immediately. The rest are put in a colander and blanch in constantly boiling water for 10 minutes. Now the fruits of the chokeberry are ready to be used in recipes for making delicious jam.

The easiest way to make chokeberry jam is according to the recipe of our grandmothers. It is considered the most reliable for long-term storage.

  • Prepared berries - 1.2 kg.
  • Granulated sugar - 1.2 kg.
  • Water - 0.5 l.

Jam cooking algorithm

First you need to make a syrup from water and sugar. When it thickens enough, without turning off the heat, berries are poured into the container and boiled. This should be done in 3 steps:

  1. The berries are boiled in syrup for 10 minutes, then set aside and cooled for 10-12 hours.
  2. Next, the syrup is boiled without berries - they should be removed for a while.
  3. After 15-20 minutes, the mountain ash is returned to the syrup and boiled until fully cooked.

The jam is packed in dry preheated jars. After sealing the container with lids, leave to cool.

A variation of this recipe

If the jam is stored not in cool cellars, but, for example, in the pantry of a city apartment, the finished product should also be subjected to pasteurization. To do this, not yet sealed cans, but only covered with lids, are placed in a pan with hot water (about 70 degrees) and pasteurized for 9 to 15 minutes (depending on the volume of the can).

After pasteurization, the containers with the jam are removed, the lids are rolled up on them, and the jars are placed for natural cooling.

Chokeberry berries in syrup

Here is another recipe for chokeberry jam that housewives have been using for a long time - berries in syrup. In this case, it is not mountain ash that is added to the syrup, but the opposite is true. Why the berries in the jam remain almost intact.

Ingredients used in the recipe:

  • Rowan berries - 1 kg.
  • Sugar - 1.5 kg.
  • Water - 0.6 l.

The sequence of cooking jam

The sorted fruits are poured with the syrup, prepared as usual, and kept for about 8 hours. And only then they start cooking the jam.

Put the basin on the stove on a small fire and immediately remove the jam after boiling. After 15 minutes, the procedure is repeated. There should be at least 5 such visits. This will allow the jam to thicken well without burning.

Jam with additives

A very aromatic, unusually tasty jam is obtained if other ingredients are added to the chokeberry. The recipe now proposed is good because such a product can also be used as an adjunct in the treatment of colds, hypertensive crises and vegetative-vascular distortion.

Ingredients:

  • Rowan - 1 kg.
  • Sugar - 1.3 kg.
  • Water - 2 glasses
  • Fruit and berry juice (any) - 1 glass
  • Lemon juice - 0.5 cups
  • Rum - 2 tablespoons

Jam making

The unusualness of this recipe in comparison with the previous ones lies not only in the addition of rum and juices of other berries to the jam. The preparation of the chokeberry is already different. The berries are pre-baked in the oven for about 5 hours. In this case, the container should be covered with a lid so that the fruits give juice.

  1. The juice protruding from the chokeberry is drained and combined with water and sugar.
  2. The syrup is cooked in the usual way.
  3. Next, rowan berries are returned to the syrup, fruit juice is poured in and rum is added. Continue to cook.
  4. At the final stage, lemon juice is poured in and after 5 minutes the jam is removed from the heat and packed in jars.

As you can see, nothing out of the ordinary, but the result will be stunning.

This recipe is another way to make chokeberry berries. It differs slightly from the ones given above.

  1. The fruits are placed in a saucepan and covered with water.
  2. Covering the container with a lid, the berries are put on fire and steamed for 5 minutes.
  3. Without removing from the heat, remove the lid, add sugar and cook for another 5 minutes (stirring, of course).
  4. After removing the jam from the stove, they forget about it for about 3 hours. During this time, they prepare citrus fruits - twist them in a meat grinder or grind them in a blender (to whom it is more convenient).
  5. When the time is right, put the jam back on the stove, add the remaining sugar and bring to a boil. After that, twisted oranges with lemon are added, everything is thoroughly mixed and the heat is immediately turned off.

Pieces of apples (0.5 kg) can also be added to this recipe. But they are brought in before the jam boils.

  2. In the morning, the infusion is poured into another container.
  3. To prepare the syrup, take only 1 glass of mountain ash infusion and mix it with sugar.
  4. While the syrup is cooking, you should tackle the rest of the ingredients:
  5. Apples are peeled and cored. The fruit must be cut into either small wedges or cubes.
  6. The zest is removed from the lemon. The citrus itself is crushed into small pieces and sent to the refrigerator for now.
  7. Peeled nuts should be covered.
  8. Prepared apples, nuts and berries of a chokeberry are stacked in a syrup over the fire. After boiling, the jam is boiled for another 15 minutes. Then remove from heat and set aside for 3 hours.
  9. The 15 minute boil procedure should be repeated 3 more times at 3 hour intervals. In the last run, add lemon.

Chokeberry jam without syrup

You can make delicious jam from chokeberry without first cooking the syrup - just fill it with sugar. But in this case, for reliability, you will have to resort to sterilizing the finished product.

It is also well suited to the dinner table in winter, which is rich in vitamins and useful microelements, which is very important in the cold season.

Ingredients used in the recipe:

In this recipe, there are only 2 ingredients - chokeberry berries and sugar. They are taken in a 1: 1 ratio. And the mass of mountain ash is determined here by the chopped berries.

Jam preparation procedure

  1. Blanched berries are passed through a meat grinder. And this must be done twice: first through a coarse-mesh lattice, then through a fine one.
  2. Next, the resulting mass is rubbed quite well with sugar. Then you can use one of the points - either put it on the fire right away, or let the sugar first dissolve in the chokeberry juice.
  3. The grated mass is put on a small fire and, with constant stirring, boil for no more than 5 minutes. Then the jam is packed in heated jars, which are covered with lids and sent to a saucepan for sterilization.
  4. The initial temperature of the water for heat treatment must be at least 80 degrees. Sterilization is carried out for 15 minutes - for containers of 0.5 liters, and within 25 minutes - for 1-liter cans.

There are still many different recipes for making unusual chokeberry jam. By modifying the basic proportions, you can also prepare various variations of sweet food: jam, jams, lozenges, which will delight not only little family members.
