How to make ham pies from cheese dough:

To prepare the pies, you need to take a glass or cup that will be used to measure the amount of all ingredients. This recipe uses a 300ml cup.

Grate the cheese on a coarse grater to make a full cup.


Pour kefir into a deep bowl. Quench the soda in kefir. Add sugar and salt.


Mix everything thoroughly. Add sifted flour and cheese.

1. The dough must be kneaded at least two hours before preparing the pies. Then it will have time to arrive, the products will be soft and airy. Dissolve yeast and sugar in warm water, add the rest of the ingredients according to the recipe, add flour and knead a soft dough, but not runny.

2. Cover the vessel with a cloth and leave to rise. As soon as the dough rises, you need to knead it with your hands and let it rise again.

3. Boiled eggs need to be peeled and cut into cubes. Also chop the ham and mix everything at once. Chop the onion and add. Salt and pepper the minced meat.

4. Divide the dough into pieces of 100-150 grams, depending on the desired size of the pies. Flatten into cakes.

A recipe for delicious pies with ham and tomatoes, made from kefir dough. It is good because it does not require long-term infusion; the baked goods are soft, light, and porous.

Ingredients

300 ml kefir;

1 tsp. soda;

3 tablespoons of oil;

1 tsp. without a hill of salt;

20 g sugar;

4 cups flour.

Preparation

1. Heat milk and water. You can simply dilute the milk with boiling water, add yeast and sugar to the warm mixture, and leave for ten minutes.

2. Now add salt and melted butter, stir. Add flour and knead the dough. It should be elastic, soft, without lumps.

3. Cover with a towel and keep warm. Hold until the first rise, press down. Then let the mixture rise again and you can make pies.

- egg for greasing pies – 1 pc.
- milk for greasing pies - 1 tbsp. spoon

Cooking yeast pies with ham and cheese



1. Dissolve the yeast in warm milk with the addition of 2 tbsp. spoons of flour, stir well so that there are no lumps, and place in a warm place for 30 minutes so that the dough ferments and rises like a cap.

2. Sift the remaining flour into a deep bowl and make a well in the mound. Break an egg into it, add salt, pour in warm water. Add the fermented dough little by little, knead a soft elastic dough, adding vegetable oil at the end.

3. Cover the dough in the bowl with a towel and place in a warm place for 1 hour. During this time it should approximately double in volume. Meanwhile, prepare the filling.

4. Cut the ham into cubes. Peel the onion, cut into thin feathers and fry in vegetable oil until golden brown. Then add the ham cubes to the pan, lightly fry along with the onion, salt and pepper to taste.

5. Remove the pan from the heat. Grate the hard cheese on a coarse grater, add to the ham and onions, mix well. The filling is ready. Leave it to cool while you make the dough.

6. Knead the risen dough on a floured table, form into a roller and cut it into equal pieces. Roll out each piece of dough into a flat cake, place the cooled filling on it, pinch the edges of the dough and form oval pies.

7. Grease a baking sheet with vegetable oil, place the pies on it, seam side down, and leave for 20 minutes in a warm place to proof. Then brush the top with an egg beaten with a spoonful of milk, place the baking sheet in the oven, heated to 180 degrees, 15-20 minutes, until golden brown.

8. Transfer the finished ham and cheese pies from the baking sheet to a plate and cover with a towel for 20-30 minutes until the baked crust softens.

Since I use dry yeast to combine with flour, and not liquid, I mix it with the flour, and then pour the liquid mixture into the prepared flour. I mix the ingredients and knead the dough. The flour has gone... of completely different properties... Therefore, you have to navigate by its quantity when kneading.

Leave the dough to rise at room temperature, protecting it from drying out.

For the filling, grate the cheese, sprinkle it with spices and mix with a raw egg.

Divide the dough into two approximately equal parts or one slightly larger than the other. Roll out the smaller one into a layer about 5 mm thick. Place slices of ham on it at a distance of 1-1.5 cm from each other.

Place a portion of the cheese filling on the ham.

Roll out the second part of the dough in the same way and cover the dough with the filling with it. Then use a suitable glass to form the pies. To do this, cut round pies with the top of a glass, pressing down, cutting through both layers of dough to the cutting surface.

Roll out the dough scraps again or simply sculpt round pieces and form the same (or maybe a different shape) pies. When kneading the dough again, the pieces may turn out crooked...

Place the dough pieces on a greased baking sheet; it is recommended to brush the surface of the dough with yolk or a mixture of yolk and cold water. I planned to sprinkle with sesame seeds, but forgot.
