Korean cold soup kuksi has taken root so well among us for one simple reason - you can cook it any way you like, that is, the basic recipe and main components of the dish, of course, are there, but the composition of the latter can be varied based on availability and taste preferences. Kuksi consists of four parts: broth, vegetables, noodles and meat (this can be omitted in vegetarian versions), we will talk about the details below.

Kuksi in Korean

Ingredients:

  • thin rice noodles - 70 g;
  • soy sauce - 130 ml;
  • 1 head of cabbage;
  • white onion - 50 g;
  • garlic cloves - 2 pcs.;
  • tomato (medium size) - 1 pc.;
  • fresh cucumber (medium size) - 1 pc.;
  • sriracha sauce - 1/3 teaspoon;
  • chicken eggs - 4 pcs.;
  • beef - 250 g;
  • parsley;
  • cold beef broth.

Preparation

Pour a couple of tablespoons of any vegetable oil into a frying pan and fry fresh tomatoes and white onions in it. Add garlic, sauce and shredded cabbage passed through a press to the contents of the frying pan, pour in 120 ml of water and simmer for about 5 minutes. Cover the pan with a lid and remove from heat.

Beat the eggs with a pinch of salt, grease the pancake pan with oil and fry thin egg pancakes. Roll the finished pancakes into a roll and cut them like noodles.

Cut a fresh cucumber into strips, mix it with parsley leaves, a couple of tablespoons of soy sauce and a tablespoon of oil. Koreans also add some sesame seeds.

Cut the beef into strips and fry it until cooked. Season and add 120 ml of water, then simmer for 10 minutes.

Boil the noodles, place them on plates and pour cold broth over them. Place stewed cabbage, fresh cucumber and egg noodles on top. This completes the preparation of kuksi in Korean. The soup should be served with a portion of soy sauce, which each guest can add to the soup according to their own taste.

Korean kuksi: recipe

Ingredients:

  • beef (pulp or tenderloin) - 300 g;
  • fresh cucumber (large) - 1 pc.;
  • radish - 80 g;
  • leaf cabbage - 130 g;
  • 200 g;
  • chicken eggs - 3 pcs.;
  • meat broth - 1 l;
  • garlic cloves - 3 pcs.;
  • fresh herbs (cilantro or parsley);
  • soy sauce;
  • rice vinegar.

Preparation

Shred any kale with soft leaves. Cut the beef into strips and quickly fry in hot oil. Add cabbage to the meat, season, reduce heat and wait another 8 minutes.

Beat the eggs with a pinch of salt and separately fry thin egg pancakes, which will then need to be rolled into a roll and cut into noodles.

Mix garlic with cilantro, add vinegar and soy sauce to the mixture to taste. Cut fresh cucumber and radish into thin strips. Boil the noodles and place on plates. Pour cold beef broth over the noodles. Of course, you can make hot kuksi in Korean, but it will have little in common with the original recipe. Place vegetables, herbs, meat and cabbage and egg pancakes on top of the noodles. Each guest will be able to independently supplement their dish with vinegar or soy sauce to taste.

How to cook kuksi in Korean?

If the two previous recipes were similar to each other, then this one stands apart because it is prepared in a thick, jellied broth.

Pour the white part of the green onions, garlic cloves and ginger slices with broth and put on fire for 20 minutes. Soak the gelatin following the directions on the package. Place the meat cut into strips into the boiling broth for a minute. Remove the broth from the heat, dissolve the gelatin and cool the broth completely in the refrigerator. Skim the fat from the surface and stir. Serve with boiled noodles, chopped fresh vegetables and boiled eggs, with a splash of rice vinegar on top.

A few words about kuksi

The name kuksi is traditional Korean noodles served in broth with meat and vegetable salads. Depending on the preferences of the person cooking, this universal dish can be:

  • liquid consistency like soup, and eat it with a spoon;
  • thick enough to be consumed using sticks.

It should also be noted that kuksi can be cooked both hot and cold. Now let's start cooking.

Products for kuksi

This dish has a very rich composition, so we will divide all the necessary products into blocks.

For the broth:

  • 3 liters of water;
  • 400 g lean pork;
  • one onion.

For the noodles:

  • 300–400 g wheat udon noodles. If there is none, then you can replace it with durum wheat spaghetti. The main thing is that the spaghetti is as thin as possible.

For the egg noodles:

  • 3 eggs;
  • spices.

For salads:

  • 300 g cucumbers;
  • two large tomatoes;
  • a bunch of dill and cilantro;
  • two carrots;
  • two onions;
  • 3 cloves of garlic;
  • 300 g white cabbage.
  • salt;
  • ground red and black pepper;
  • sesame;
  • ground coriander;
  • vinegar;
  • vegetable oil.

How to prepare broth for kuksi?

There are two ways to prepare broth for kuksi:

  1. Standard. Pour cold water over the meat and place on the stove. Over low heat, constantly skimming off the foam, cook a clear broth. Remove the meat and cool the liquid. Add salt, pepper, soy sauce, vinegar, sesame seeds, finely chopped herbs.
  2. Easy. Boil water, cool it. Add greens, sesame seeds, salt, vinegar, soy sauce.


How to cook meat for kuksi?

If the meat was cooked in broth, then it is enough to cut it into strips and add salt. Sprinkle with sunflower oil and leave to salt. In the version with light broth, you need to do the following with meat:

  • cut pork into small strips;
  • heat a frying pan, pour in sunflower oil;
  • fry the pork pieces for 20–25 minutes;
  • Salt the finished meat while it is hot.


How to prepare noodles for kuksi?

Boil the udon noodles until tender according to the instructions on the package. Drain the water and rinse the finished noodles with cold water. If spaghetti is used, cook it until half cooked.


How to prepare egg straws for kuksi?

Egg straw is a mandatory ingredient that must be present in kuksi. It is prepared like this:

  • Beat eggs with spices (salt, pepper).
  • Pour into the pan.
  • Fry on both sides for 1-2 minutes.
  • Roll the finished omelette into a roll.
  • Cut the roll into strips.


Salads for kuksi

You can prepare any salads for this dish, depending on your preferences. We have collected the most current salad recipes for kuksi.

Carrot salad:

  • Grate the carrots. It should be long, like in Korean.
  • Add 0.5 tsp each of vinegar, sugar, salt, coriander.
  • Mix everything.
  • Fry 1 onion in vegetable oil until golden brown.
  • Send the onion along with the oil to the carrots.
  • Squeeze out a clove of garlic.
  • Stir and the salad is ready.

If you are preparing a hot kuksi, then the carrots are fried along with the onions. You can also add sweet pepper, cut into cubes.


Cabbage salad:

  • Chop the cabbage into long strips.
  • Add 1 tbsp vegetable oil, 0.5 tsp each salt, vinegar, sugar. A little red pepper.
  • Finely chop the cilantro.
  • Combine greens with cabbage.
  • Stir and let stand for 3-7 minutes.

For hot kuksi, you need to simmer the cabbage, and then add spices and herbs.


Tomato+cucumber salad:

  • Cut tomatoes and cucumbers into small pieces.
  • Cut half an onion head.
  • Squeeze 1-3 cloves of garlic.
  • Add 3 tablespoons of vegetable oil, 0.5 teaspoons each of salt and vinegar. Pepper to taste.
  • Mix everything.


In general, kuksi can be prepared from a variety of vegetables that you can find in your kitchen. In winter it can be kimchi or regular cabbage, radishes, cucumbers, eggs, peppers. In summer - radishes, tomatoes, peppers, cucumbers and plenty of greens.

We prepared this kuksi in winter, so we took:

  • 1 large radish;
  • Salted, washed peppers;
  • 3 eggs;
  • kimchi cabbage;
  • Fillet (better to take pork or beef);
  • Spices – salt, garlic, black and red pepper, vinegar.

How to cook kuksi?

First of all, set the meat to boil, it will just cook while you prepare the rest of the ingredients - kuksi-chumi (salad dressings). Once the meat is cooked, cut it into strips.

Moreover, you can cook kuksi-chumi in any order convenient for you.

Grate the radish on a grater for Korean salads and to remove the bitterness from it, add salt and stir.

Let it sit, then rinse in water and squeeze thoroughly.

The dressing of radish is quite simple, by analogy with other Korean salads - salt (if necessary), ground black and red pepper, dry cilantro, garlic, vinegar and all this is poured with onions fried in hot oil.

When finished it looks like this.

Slice.

It needs to be fried with tomato paste and spices until cooked. For spices, I add black pepper and ground cilantro.

Wash the kimchi cabbage, squeeze and chop.

It needs to be fried in the same way as the pepper. I usually fry the cabbage immediately after the pepper in the same bowl, or before it. Season with black pepper and ground cilantro.

Beat the eggs, adding a pinch of salt and vegetable oil.

Whipped eggs should be fried like regular pancakes. Cut into strips.

That's it, kuksi-chumi (salad dressings) are ready! Now you can make kuksi-muri (broth).

It can be made from the broth in which the meat was cooked, or you can use plain water, which is what we did. It is kuksi-muri that gives everything kuksi its taste, so it is quite important that it turns out tasty.

Its taste is quite difficult to describe, but in general it should be salty-sour-sweet-tart.

For a liter of water you need:

  • 5 tablespoons of sugar;
  • 5 tablespoons of soy sauce;
  • 1 tablespoon salt;
  • 1 teaspoon vinegar;
  • Spices and herbs to taste.

Also, if you wish, you can add sesame oil, or sprinkle a portion of kuksi with sesame seeds.

Boil the noodles and Korean kuksi is ready!

The portion is assembled simply - put noodles in a cup, pour in kuksi-muri and lay out all the prepared ingredients (kuksi-chumi). It looks something like this.

KUKSIMURI
Grind the tomatoes in a blender.
Add soy sauce, sugar, vinegar, ground coriander, salt, tomatoes and chopped cilantro to the water.

CRAZY
Chop the cabbage into strips, add salt, mash and leave for 15-20 minutes.
Cut the cucumbers into strips, add salt and mix.
Fry the onions with half the vegetable oil.
Drain the juice from the cucumbers, add the fried onions, half the chopped garlic and half the hot red pepper.
Mix and put in the refrigerator.
Drain the juice from the cabbage, add the remaining garlic and hot pepper.
Heat the remaining oil in a frying pan, pour into the cabbage, stir and put in the refrigerator.


EGG NOODLES
Scramble the eggs with salt and 2 tsp. vegetable oil.
Fry the egg pancakes on both sides in a frying pan.
Cut them into thin strips.


ASSEMBLY OF KUKSI
Place funchose or spaghetti in a deep soup plate.
Pour in kuksimuri.
Arrange cabbage, cucumbers, egg noodles and chopped meat in a circle.
Eating with squelching and slurping so that everyone leaves the kitchen and everything goes to you.
