Let's put the bowl aside for some time, for fifteen to twenty minutes - the dough will infuse during this time and, perhaps, even become a little thicker due to the swelling of the flour. Now you can add just enough water at room temperature so that the dough turns out to be "fluid", reminiscent of liquid sour cream.

If you are wondering why water is added, the answer is quite simple - pancakes made from such a dough (mixed with milk and water) turn out to be soft elastic, do not tear when the filling (any) is wrapped in them.


Well, let's start baking pancakes. In principle, they can be baked in a well-heated dry skillet. Due to the presence of vegetable oil in the dough, the pan can no longer be greased ... True, in this case, you need to take either a special pancake pan, or with a thick bottom (cast iron, for example), or with a non-stick coating.

But I, even with such a frying pan, still grease it with a piece of bacon. Only then I pour a portion of the batter into a hot pan and quickly distribute it in a circular motion over the entire surface.

First, you need to prepare all the products that you need to make a pancake pie with snail cottage cheese. It is best to take cottage cheese with a soft consistency (without grains). The fat content of the curd can be any, but it is best to use a product of 5-9% fat. If desired, the curd filling can be flavored with vanilla. For frying pancakes, it is best to use refined sunflower oil.

Cooking pancake pie with snail cottage cheese should be started by baking pancakes. As you know, they can be made with water, milk, kefir or a mixture of milk and kefir. But it's best to cook pancakes with milk. This will make them thin and elastic. Grind eggs with sugar, a pinch of salt and vegetable oil. Then sift the flour and gradually add it to the egg mixture. Add a pinch of salt and baking soda. Stir everything.

It is advisable to warm up the milk a little, then pour it into the dough and mix everything thoroughly. Let the dough stand for 20-30 minutes. Grease a frying pan with a little oil and heat well. Pour a ladle of dough and, turning the pan, distribute it evenly over the pan. Fry the pancake for about three minutes, until the edges are golden brown. Then turn the pancake over to the other side and fry it for another 1-2 minutes. So fry all the pancakes. From this amount of dough, 13 pieces are obtained.

Then you need to prepare the filling. To do this, the raisins must be washed several times with hot water. Then pour boiled water over it for about 15 minutes, then put it in a colander and dry. Thoroughly grind cottage cheese with sugar and egg.

Then add raisins to the curd and stir everything well.

Now you need to put about two tablespoons of the filling on the pancake, distribute it evenly over the entire surface, then roll the pancake into a tube. Do the same with all other pancakes.

Grease a mold with a diameter of 24-26 cm. Put the pancake tubes into it in a spiral, starting from the center of the snail. Try to stack the pancakes as tightly as possible.

Turn on the oven, setting the temperature to 180 degrees. It remains to prepare the fill. To do this, beat the eggs with sugar and mix them with sour cream or kefir until a homogeneous mass is obtained.

Pour the resulting mass into the pie.

Place the dish in the oven and bake the cake until golden brown, then let it cool, and only then transfer it to a dish.

1 onion;
1 tbsp. l. butter;
5 pieces. green onions;
1 pinch of sugar;
1 pinch of ground black pepper.

Cooking steps

Add sunflower oil to the eggs and beat with a whisk. Mix the sifted flour with baking soda, salt, sugar, pepper and pour in portions into the mixture of eggs and butter.

Then pour in milk little by little, stirring thoroughly. Set the dough aside for 15 minutes for the gluten to swell.

During this time, chop mushrooms and onions at random.

Melt the butter in a frying pan and fry the mushrooms and onions in it, stirring occasionally, for 8-10 minutes, and salt at the end. Grind the finished mushroom filling in a blender.

Finely chop the green onion. Grease the pan with oil 1 time. Pour a handful of onions onto the surface of the pan and immediately pour a portion of the dough. When one side of the pancake turns golden brown, turn the pancake over and fry the other side.

Then cut each pancake in half. Put the mushroom filling on the edge with a strip.
