Inflorescences break off easily and care must be taken not to damage the vegetative buds at their base. Theoretically, it is good to collect inflorescences in wet weather so as not to lose pollen, but in practice it turned out that we walked “along the pine” in the very dry and hot weather.

Sort the houses of the inflorescence and pour boiling syrup of water and sugar (1: 1) The amount of syrup is given approximately, never measured, poured in such a way as to completely cover the pine mass. DO NOT COOK, LET AT LEAST SOME VITAMINS BE PRESERVED! Press down the inflorescences with a saucer or a small lid so that they do not float up and cover, let it cool. Strain the cooled syrup through a sieve, squeeze the inflorescences and discard, let the syrup settle, then carefully drain from the sediment. The sediment is a layer of pine pollen. To be honest, it tastes nothing special, but the pollen is credited with a bunch of useful properties and the syrup is special! Sweet and sour, almost without bitterness, with the aroma of flowers and pine resin.

Keep refrigerated. In the perestroika years, we served this syrup to guests for tea with freshly baked white bread (with bread, if anyone remembers, then there were also interruptions, we had to learn how to bake something like a loaf) At first, not a single guest could understand what the syrup was from: a combination of flower and coniferous aromas confused everyone - but no one refused the treat.

A couple of warnings: any pollen is an allergen, an allergy to flowering, of course, is a contraindication to the consumption of this delicacy. Another warning - pine can be harmful in glomerulonephritis and acute hepatitis, but this is theoretical, in practice I don’t remember that someone got sick from our treat.

The collection of pine buds is carried out in February-March, when they are just beginning to swell and the scales are still tightly pressed to the bud. They are cut with secateurs along with the edge of the branch (4-5 shoots) and only from the lateral branches of young trees, in those areas that are intended for thinning pine plantations. They are dried under a canopy in the open air or in an attic with good ventilation so that they do not lose their medicinal properties.

Pine honey recipe:

For cooking, you need to collect away from the roads in young pine plantations at the end of May. Rinse, put in an enamel bowl and pour water so that the water level is one and a half centimeters higher than the kidneys, cover, put on fire, bring to a boil and cook for twenty minutes. Set aside and infuse for 24 hours, the liquid should acquire a rich green color.

Then pour into another bowl, add sugar at the rate of: per liter of infusion - one kilogram of sugar, bring to a boil and cook for an hour and a half or two, removing the foam. “Honey” at the end of cooking acquires a crimson color. Pour into sterilized glass jars, cool and then seal with plastic lids. “Honey” is stored for a long time even at room temperature.

The medicinal properties of “honey” are used to strengthen the immune system, prevent pulmonary tuberculosis, treat respiratory diseases, metabolic disorders, gout, rheumatism, dropsy.

Pine cone jam:
a liter jar of water, a liter jar of sugar and a liter jar of cones are taken. Need more - take two cans and so on. Pour water into a basin in which we constantly cook jam and put on fire. Bring to a boil and add sugar to the water. Stir with a wooden spoon to dissolve the sugar. The cones are pre-cleaned of debris, washed, poured into syrup.
When the syrup with cones boils, reduce the heat and boil for about 5 minutes. Turn off the heat and let the cone jam cool completely. Boil in this way three times, each time cooling the jam, when cooling, cover the basin with paper or gauze.
After the pine cones are boiled in the jam for the third time, turn off the fire, quickly take warm sterilized jars and pack the cones with a spoon, fill the jars to the very top with hot syrup in which the cones were boiled.

It remains to roll up the jars, cover them with a towel or a blanket and let them cool in this way until tomorrow.

Impregnation of cones with syrup is best done hot. We put the jam on the fire for the third time, bring to a boil, boil for 40 minutes. During boiling, the syrup becomes amber, tart in taste, and the cones become soft. The finished product is removed from the fire and closed in jars. It is better to use ready-made jam between meals.
